🍽️ Aromatic Lamb Shank with Herb and Garlic Marinade

Ingredients
- 1 lamb shank approx. 2,5 kg (with bone)
- 2 garlic cloves
- 2 sprigs rosemary
- 5 stems thyme
- 1 untreated lemon
- 5 tbsp olive oil
- pepper
- salt
- 200 g cranberries (jar)
Instructions
- 1. Rinse the lamb meat under cold water.
- 2. Pat the meat completely dry with a kitchen towel.
- 3. Remove the lower bone from the meat.
- 4. Leave the second bone in the meat.
- 5. Shape the meat into a uniform roll using kitchen twine.
- 6. Peel the garlic cloves.
- 7. Mince the garlic very finely.
- 8. Rinse the rosemary sprigs under water.
- 9. Shake the rosemary sprigs dry.
- 10. Strip the rosemary needles from the stems.
- 11. Rinse the thyme sprigs under water.
- 12. Shake the thyme sprigs dry.
- 13. Strip the thyme leaves from the stems.
- 14. Finely chop the stripped herbs.
- 15. Wash the lemon under hot water.
- 16. Pat the lemon dry.
- 17. Grate the lemon zest finely.
- 18. Squeeze the juice from the lemon.
- 19. Mix the lemon juice with the lemon zest.
- 20. Add the minced garlic to the mixture.
- 21. Add the chopped herbs to the mixture.
- 22. Add the oil to the marinade.
- 23. Season the marinade with black pepper.
- 24. Rub the lamb shank all over with the marinade.
- 25. Cover the meat.
- 26. Place the meat in the refrigerator.
- 27. Let the meat marinate overnight if possible.
- 28. Preheat the oven to 120 degrees.
- 29. Set the oven heating to top and bottom heat.
- 30. Take the lamb out of the marinade.
- 31. Salt the lamb meat.
- 32. Heat a frying pan.
- 33. Brown the lamb all over.
- 34. Place the browned meat on a baking sheet.
- 35. Roast the lamb in the oven for about 2.5 hours.
- 36. Aim for a pink doneness.
- 37. Turn the meat occasionally.
- 38. Brush the meat with the marinade occasionally.
- 39. Take the lamb shank out of the oven.
- 40. Remove the kitchen twine from the meat.
- 41. Slice the meat.
- 42. Serve the lamb shank.
- 43. Serve cranberries alongside.
- 44. Serve oven potatoes as desired.
