🍽️ Crispy Lamb Leg with Herb Crust

Ingredients
- 1 lamb leg approx. 2,5 kg (with bone)
- salt
- pepper (from the mill)
- 2 tbsp vegetable oil
- 2 tbsp medium-hot mustard
- 2 tbsp coriander seeds
Instructions
- 1. Preheat the oven to 120 degrees Celsius. Set the heating mode to top and bottom heat.
- 2. Rinse the lamb leg briefly and pat it completely dry with a kitchen towel.
- 3. Remove the bone at the bottom end of the meat, but leave the top bone in place.
- 4. Shape the meat into a uniform roll and tie it securely with kitchen twine.
- 5. Season the meat generously with salt and pepper.
- 6. Heat oil in a pan and sear the meat on all sides until it has a brown crust.
- 7. Place the seared meat onto a baking sheet.
- 8. Brush the surface of the meat thinly with mustard.
- 9. Coarsely crush the coriander seeds using a mortar and pestle or a knife.
- 10. Spread the crushed coriander seeds evenly over the meat.
- 11. Put the tray in the oven and roast the meat for about 2.5 hours until it is pink (medium).
- 12. Take the meat out of the oven and let it rest covered with aluminum foil for a few minutes.
- 13. Remove the kitchen twine from the meat.
- 14. Slice the lamb and serve it.
