🍽️ Honey-glazed lamb shank with roasted potatoes

Ingredients
- Lamb shank (with bone approx. 2,5 kg)
- Salt
- Pepper (from the mill)
- Olive oil
- 600 g firm-cooking potatoes
- 4 shallots
- 3 tbsp liquid honey
- 1 tsp coriander seeds
Instructions
- 1. Preheat the oven to 160 degrees Celsius. Set the heating mode to top and bottom heat.
- 2. Rinse the lamb briefly under cold running water. Then pat it completely dry with kitchen paper.
- 3. Season the meat all over with salt and pepper. Then brush it with olive oil.
- 4. Place the lamb in a roasting pan or casserole dish. Put it in the oven and roast for about 2.5 hours.
- 5. Add a little water to the pan if needed to prevent the meat from drying out. Turn the shank occasionally and baste it with the pan juices.
- 6. Peel the potatoes and the shallots. Cut the potatoes into large chunks and the shallots into wedges.
- 7. Distribute the prepared vegetables around the lamb in the pan during the last 30 to 40 minutes of cooking time.
- 8. Season the vegetables with salt and pepper and let them cook together with the meat.
- 9. Mix the honey with coarsely crushed coriander in a small bowl.
- 10. Brush the lamb shank repeatedly with the honey-coriander mixture during the last 45 minutes of cooking time.
