🍽️ Aromatic Lamb Rack with Rosemary

Ingredients
- 2 lamb racks (approx. 400 g each, ready for cooking)
- 1 bunch rosemary
- 4 juniper berries
- 1 tsp peppercorns
- sea salt
- 4 tbsp olive oil
Instructions
- 1. Place the rosemary sprigs on a baking sheet.
- 2. Wash the lamb meat and pat it dry with a kitchen towel.
- 3. Grind juniper berries, pepper, and salt into a fine powder using a mortar and pestle.
- 4. Mix the spice powder with olive oil to form a paste.
- 5. Coat the lamb meat thoroughly with this oil-spice mixture.
- 6. Sear the meat in hot oil briefly and firmly on all sides.
- 7. Remove the meat from the pan and place it on the baking sheet with the rosemary sprigs.
- 8. Preheat the oven to 120 degrees Celsius with top and bottom heat.
- 9. Roast the lamb in the oven for about 30 to 35 minutes until pink (medium).
- 10. Remove the meat from the oven and let it rest for a few minutes before slicing.
- 11. Serve the lamb with homemade french fries if desired.
