  2. 2. Wash the lamb meat and pat it dry with a kitchen towel.
  3. 3. Grind juniper berries, pepper, and salt into a fine powder using a mortar and pestle.
  4. 4. Mix the spice powder with olive oil to form a paste.
  5. 5. Coat the lamb meat thoroughly with this oil-spice mixture.
  6. 6. Sear the meat in hot oil briefly and firmly on all sides.
  7. 7. Remove the meat from the pan and place it on the baking sheet with the rosemary sprigs.
  8. 8. Preheat the oven to 120 degrees Celsius with top and bottom heat.
  9. 9. Roast the lamb in the oven for about 30 to 35 minutes until pink (medium).
  10. 10. Remove the meat from the oven and let it rest for a few minutes before slicing.
  11. 11. Serve the lamb with homemade french fries if desired.
