🍽️ Quick Stir-Fried Lamb Strips

Ingredients
- 700 g lean lamb meat (from the leg)
- 2 onions
- 2 spring onions
- 1 clove garlic
- 1 red chili pepper
- 2 tbsp sesame seeds
- 3 tbsp germ oil
- 3 tbsp sesame oil
- 150 ml lamb stock (from the jar)
- 2 tbsp cornstarch
- salt
- pepper (from the mill)
- 120 ml soy sauce
- 3 tbsp hoisin sauce
- 2 tbsp sesame oil
- 2 tbsp rice wine
- 2 tbsp cornstarch
- 1 tbsp liquid honey
- pepper (1/4 tsp ground each)
- cinnamon (1/4 tsp ground each)
- cloves (1/4 tsp ground each)
- star anise (1/4 tsp ground each)
Instructions
- 1. Cut the lamb meat into thin, narrow strips.
- 2. Whisk all the marinade ingredients together in a small bowl.
- 3. Add the lamb strips to the marinade and mix well until fully coated.
- 4. Let the meat marinate for about 1 hour at room temperature.
- 5. Peel the onions and slice them into thin strips.
- 6. Wash the spring onions and slice the white and light green parts into small rings.
- 7. Peel the garlic and chop it finely.
- 8. Wash the chili pepper, cut it lengthwise, and remove the seeds and white inner membrane.
- 9. Slice the deseeded chili pepper into thin strips.
- 10. Toast the sesame seeds in a dry pan without oil until golden brown.
- 11. Heat the germ oil in a wok or a large frying pan.
- 12. Fry the onion strips until golden yellow.
- 13. Remove the onions from the pan using a slotted spoon and set them aside.
- 14. Add the sesame oil to the same pan.
- 15. Add the marinated lamb meat to the pan.
- 16. Fry the meat for 2 minutes while stirring constantly.
- 17. Remove the meat from the pan and set it aside.
- 18. Add the chopped garlic and spring onion rings to the pan.
- 19. Stir-fry the vegetables for 30 seconds.
- 20. Pour the meat stock into the pan.
- 21. Mix the cornstarch with a little water until smooth and free of lumps.
- 22. Stir the cornstarch-water mixture into the stock.
- 23. Bring the sauce to a boil and let it thicken.
- 24. Return the fried lamb meat and onions to the pan.
- 25. Add a little water if the sauce is too thick.
- 26. Season the dish with salt and pepper to taste.
- 27. Sprinkle the finished dish with the toasted sesame seeds.
