🍽️ Lamb patties with bean salad

Ingredients
- 750 g green beans
- salt
- 3 red onions
- 100 ml broth
- 4 tbsp vinegar
- pepper (from a grinder)
- 1 stale rolls
- 2 tsp chopped thyme leaves
- 1 bunch savory
- 500 g lamb mince
- 6 tbsp olive oil
- 100 g feta cheese
Instructions
- 1. Rinse the beans under running water.
- 2. Trim the ends of the beans.
- 3. Cut the beans into small pieces.
- 4. Bring a pot of water to a boil.
- 5. Season the boiling water generously with salt.
- 6. Cook the beans for about 10 minutes.
- 7. Drain the beans.
- 8. Shock the beans with cold water.
- 9. Let the beans drain well.
- 10. Peel the onions.
- 11. Dice the onions finely.
- 12. Take about two-thirds of the diced onions.
- 13. Mix these onions with broth, vinegar, salt, and pepper.
- 14. Bring the onion mixture to a boil.
- 15. Pour the hot mixture over the beans.
- 16. Soak the breadcrumbs in water.
- 17. Wash the herbs under running water.
- 18. Pat the herbs dry with a kitchen towel.
- 19. Finely chop the herbs separately.
- 20. Squeeze the soaked breadcrumbs well.
- 21. Add the squeezed breadcrumbs to the minced meat.
- 22. Add the remaining diced onions to the minced meat.
- 23. Season the meat mixture with salt and pepper.
- 24. Add chopped thyme to the meat mixture.
- 25. Mix all ingredients for the patties well.
- 26. Form 12 small patties from the mixture.
- 27. Heat 3 tablespoons of oil in a pan.
- 28. Fry the patties for about 8 minutes.
- 29. Add the herb betony to the beans.
- 30. Add the remaining oil to the beans.
- 31. Crumble the sheep's cheese.
- 32. Gently fold the sheep's cheese into the beans.
- 33. Season the beans to taste.
- 34. Serve the patties with the beans.
