  1. 1. Rinse the lamb under cold running water and pat it completely dry with a kitchen towel.
  2. 2. Cut the meat into uniform cubes.
  3. 3. Wash the bell peppers and halve them lengthwise.
  4. 4. Remove the seeds and white pith from the bell peppers.
  5. 5. Cut the peppers into bite-sized pieces.
  6. 6. Peel the onions and cut them into quarters.
  7. 7. Gently separate the onion layers so they do not fall apart during grilling.
  8. 8. Thread the meat cubes and pepper pieces onto the skewers in an alternating pattern.
  9. 9. Add the onion pieces between the meat pieces on the skewers.
  10. 10. Peel the garlic clove and chop it finely.
  11. 11. Mix the chopped garlic with the herbs and oil in a small bowl.
  12. 12. Brush the skewers with the oil-garlic mixture.
  13. 13. Grill the skewers in a grill pan or on the grill for 8 to 10 minutes, turning them on all sides.

  26. 26. Serve the skewers directly on top of the salad.
