🥗 Lamb Skewers with Fresh Salad

Ingredients
- 800 g lamb meat (e.g. leg or loin)
- 2 bell peppers (red and yellow)
- 2 onions
- 2 garlic cloves
- 2 tbsp freshly chopped herbs (e.g. thyme and oregano)
- 5 tbsp olive oil
- 4 tomatoes
- 150 g salad leaves (e.g. iceberg lettuce and Lollo Rosso)
- 1 onion
- 4 spring onions
- 150 g yogurt
- 1 tbsp lemon juice
- salt
- pepper (from the mill)
Instructions
- 1. Rinse the lamb under cold running water and pat it completely dry with a kitchen towel.
- 2. Cut the meat into uniform cubes.
- 3. Wash the bell peppers and halve them lengthwise.
- 4. Remove the seeds and white pith from the bell peppers.
- 5. Cut the peppers into bite-sized pieces.
- 6. Peel the onions and cut them into quarters.
- 7. Gently separate the onion layers so they do not fall apart during grilling.
- 8. Thread the meat cubes and pepper pieces onto the skewers in an alternating pattern.
- 9. Add the onion pieces between the meat pieces on the skewers.
- 10. Peel the garlic clove and chop it finely.
- 11. Mix the chopped garlic with the herbs and oil in a small bowl.
- 12. Brush the skewers with the oil-garlic mixture.
- 13. Grill the skewers in a grill pan or on the grill for 8 to 10 minutes, turning them on all sides.
- 14. Wash the tomatoes and cut out the hard stem area.
- 15. Slice the tomatoes into thin rounds.
- 16. Wash the leaf salad and remove any wilted leaves.
- 17. Tear the salad into bite-sized pieces.
- 18. Peel the onion and slice it into thin rings.
- 19. Wash the spring onions and remove the dry ends.
- 20. Cut the green part of the spring onions into small sticks.
- 21. Slice the white part of the spring onions into thin rings.
- 22. Arrange the salad, tomato slices, onion rings, and spring onions decoratively on plates.
- 23. Whisk the yogurt with a little water and lemon juice in a small bowl.
- 24. Season the dressing with salt and pepper to taste.
- 25. Drizzle the dressing over the arranged salad.
- 26. Serve the skewers directly on top of the salad.
