🍽️ Lamb meatballs with vegetables

Ingredients
- 1 stale roll
- 1 small onion
- 2 garlic cloves
- 1 tbsp olive oil
- 500 g minced lamb meat
- 1 egg
- 2 tbsp chopped coriander leaves
- salt
- pepper
- 1 pinch chili peppers
- 1 tbsp breadcrumbs (as needed)
- olive oil (for the pan)
- 1 onion
- 400 g tomatoes
- coriander leaves (for garnish)
Instructions
- 1. Place the bread roll in a bowl with cold water and let it soak.
- 2. Peel the onion and garlic and chop them finely.
- 3. Heat the oil in a pan.
- 4. Sauté the onions and garlic in the hot oil until they are translucent.
- 5. Remove the onion and garlic mixture from the pan and place it in a large bowl.
- 6. Add the minced meat, the egg, and the coriander to the bowl.
- 7. Squeeze the soaked bread roll, crumble it, and add it to the bowl.
- 8. Knead all ingredients into a smooth dough.
- 9. Season the dough with salt, pepper, and a little chili.
- 10. Check the consistency: If the dough is too soft, knead in some breadcrumbs.
- 11. Moisten your hands with a little water.
- 12. Form small balls from the dough using your moist hands.
- 13. Grease a baking dish with a little oil.
- 14. Place the meatballs in the prepared dish.
- 15. Preheat the oven to 200 degrees Celsius with top and bottom heat.
- 16. Rinse the tomatoes under running water.
- 17. Cut the tomatoes into pieces.
- 18. Slice the onion into rings.
- 19. Distribute the tomato pieces and onion rings over the meatballs in the dish.
- 20. Bake the dish in the preheated oven for about 30 minutes.
- 21. Remove the dish from the oven.
- 22. Arrange the meatballs on a plate.
- 23. Sprinkle the meatballs with fresh coriander.
- 24. Serve the meatballs with pasta or fresh white bread.
