🍽️ Aromatic Lamb Curry

Ingredients
- 1 onion
- 1 garlic clove
- 2 cm fresh ginger
- 1 red chili pepper
- 2 carrots
- 800 g ground lamb
- 2 tbsp ghee
- 1 tbsp garam masala
- 600 ml vegetable broth
- salt
- pepper (from the mill)
- 4 tomatoes
- 250 g peas (fresh or frozen)
- 1 tbsp lemon juice
- cilantro leaves (for garnishing)
Instructions
- 1. Peel the onion, garlic, and ginger.
- 2. Finely dice the onion, garlic, and ginger.
- 3. Wash the chili pepper.
- 4. Halve the chili pepper and remove the seeds.
- 5. Finely dice the deseeded chili pepper.
- 6. Peel the carrots.
- 7. Cut the carrots into small cubes.
- 8. Heat ghee in a pot.
- 9. Fry the minced meat until crumbly and golden brown.
- 10. Add the diced onion, garlic, ginger, and chili pieces to the meat.
- 11. Sauté the vegetables for another 2 to 3 minutes.
- 12. Add the garam masala.
- 13. Let the spice sweat briefly.
- 14. Pour in the broth.
- 15. Season the curry with salt and pepper.
- 16. Simmer the curry gently for about 30 minutes, stirring occasionally.
- 17. Peel the tomatoes.
- 18. Quarter the tomatoes and remove the core.
- 19. Cut the tomatoes into pieces.
- 20. Add the tomatoes and peas to the curry.
- 21. Cook the curry for another 10 minutes.
- 22. Add more broth if necessary.
- 23. Season the curry to taste with salt, lemon juice, and pepper.
- 24. Fill the bowls with the curry.
- 25. Garnish the dish with coriander.
- 26. Serve the curry with flatbread.
