🍽️ Aromatic Lamb Curry with Sweet Potatoes

Ingredients
- 400 g sweet potatoes
- 1 onion
- 2 garlic cloves
- 5 g ginger
- 2 tomatoes
- 1 red chili pepper
- 800 g lamb meat (e.g. shoulder)
- 3 tbsp vegetable oil
- 1 cinnamon stick
- 5 curry leaves
- 1 tbsp Durban Masala
- 1 tsp turmeric
- 1 tsp garam masala
- salt
- fresh coriander (for garnishing)
Instructions
- 1. Wash the sweet potatoes under running water.
- 2. Peel the sweet potatoes and cut them into small cubes.
- 3. Peel the onion, garlic, and ginger.
- 4. Finely chop the onion, garlic, and ginger.
- 5. Pour boiling water over the tomatoes.
- 6. Immediately remove the tomatoes from the water to cool them down.
- 7. Peel the skin off the tomatoes.
- 8. Remove the stem area and seeds from the tomatoes.
- 9. Dice the tomato flesh into small pieces.
- 10. Rinse the chili peppers under running water.
- 11. Wash the lamb meat under running water.
- 12. Pat the meat dry with a kitchen towel.
- 13. Cut the meat into bite-sized pieces.
- 14. Heat the oil in a large pan.
- 15. Add the chopped onions, garlic, and ginger to the pan.
- 16. Add the cinnamon stick, curry leaves, and Durban Masala.
- 17. Fry the ingredients for 3 to 4 minutes.
- 18. Continue frying until the onions are lightly browned.
- 19. Continue frying until the spices are fragrant.
- 20. Add the meat to the pan.
- 21. Add the diced tomatoes to the pan.
- 22. Add the turmeric to the pan.
- 23. Pour about 150 milliliters of water into the pan.
- 24. Let the curry simmer over low heat.
- 25. Simmer the curry for about 1 hour.
- 26. Stir the curry occasionally.
- 27. Add the sweet potatoes to the pan after about 40 minutes.
- 28. Add the chili peppers to the pan after about 40 minutes.
- 29. Let the sweet potatoes and chili peppers cook along.
- 30. Add a little more water if necessary.
- 31. Season the curry with Garam Masala.
- 32. Season the curry with salt.
- 33. Garnish the finished curry with coriander greens.
- 34. Serve the curry.
- 35. Serve the curry with Atchar.
- 36. Atchar is a South African chutney made from mango.
