🍽️ Aromatic Lamb Curry

Ingredients
- 400 g onions
- 3 garlic cloves
- 1 chili pepper
- 600 g lamb meat (from the leg)
- 250 g chickpeas (from the can)
- 3 tbsp ghee
- 2 tbsp curry powder
- 1 tsp cinnamon powder
- 1 tbsp flour
- 400 ml lamb stock (from the jar)
- coriander leaves
- 1 tsp sesame oil
- salt
- pepper (from the mill)
Instructions
- 1. Peel the onions and cut them into thin strips.
- 2. Peel the garlic and chop it finely.
- 3. Wash the chili pepper, remove the stem and the white inner membranes to control the heat, and cut it into small cubes.
- 4. Cut the lamb meat into bite-sized pieces.
- 5. Place the chickpeas in a sieve and let them drain well.
- 6. Heat ghee in a casserole pot.
- 7. Fry the meat in batches until browned and then remove it from the pot.
- 8. Sauté the onions and garlic in the remaining fat.
- 9. Return the curry powder, cinnamon, chili, chickpeas, and meat to the pot.
- 10. Dust everything with flour.
- 11. Pour in the meat stock and season with salt and pepper.
- 12. Simmer the curry covered for about 45 minutes.
- 13. Taste the finished curry and adjust with sesame oil, salt, and pepper.
- 14. Serve the curry sprinkled with fresh coriander.
