  1. 1. Peel the onions and cut them into thin strips.
  2. 2. Peel the garlic and chop it finely.
  3. 3. Wash the chili pepper, remove the stem and the white inner membranes to control the heat, and cut it into small cubes.
  4. 4. Cut the lamb meat into bite-sized pieces.
  5. 5. Place the chickpeas in a sieve and let them drain well.
  6. 6. Heat ghee in a casserole pot.
  7. 7. Fry the meat in batches until browned and then remove it from the pot.
  8. 8. Sauté the onions and garlic in the remaining fat.
  9. 9. Return the curry powder, cinnamon, chili, chickpeas, and meat to the pot.
  10. 10. Dust everything with flour.
  11. 11. Pour in the meat stock and season with salt and pepper.
  12. 12. Simmer the curry covered for about 45 minutes.
  13. 13. Taste the finished curry and adjust with sesame oil, salt, and pepper.
  14. 14. Serve the curry sprinkled with fresh coriander.
