  1. 1. Peel the potatoes and wash them thoroughly.
  2. 2. Cut the peeled potatoes into small, even cubes.
  3. 3. Fill a pot with water, add some salt, and bring it to a boil.
  4. 4. Add the potato cubes to the boiling salted water.
  5. 5. Cover the pot with a lid and let the potatoes cook until tender for about 25 minutes.
  6. 6. Wash the fresh sage leaves and chop them very finely.
  7. 7. Melt three tablespoons of butter in a small pan over medium heat.
  8. 8. Add the chopped sage to the melted butter.
  9. 9. Fry the sage briefly until fragrant, but do not let it burn.
  10. 10. Remove the pan from the heat immediately to save the butter-sage mixture.
  11. 11. Drain the cooking water from the potatoes.
  12. 12. Let the potatoes steam in the pot for a short moment to let the moisture escape.
  13. 13. Add the remaining butter, the cream, and the prepared sage butter to the potatoes.
  14. 14. Mash the potatoes with a potato masher until smooth.
  15. 15. Season the mashed potatoes to taste with salt and pepper.
  16. 16. Keep the mashed potatoes warm until the meat is ready.
  17. 17. Peel the carrot thoroughly.
  18. 18. Slice the carrot into long, thin strips using a vegetable peeler.
  19. 19. Heat some oil in a large frying pan.
  20. 20. Place the lamb chops in the hot pan.
  21. 21. Fry the chops on the first side for one to two minutes until well browned.
  22. 22. Turn the chops and fry them on the second side for another one to two minutes.
  23. 23. Season the lamb chops with salt and pepper while frying.
  24. 24. Spread the warm mashed potatoes evenly onto the serving plates.
  25. 25. Place the cooked lamb chops directly on top of the mashed potatoes.
  26. 26. Garnish the dish with the carrot strips and fresh sage leaves.
