🍽️ Homemade Lamb Broth

Ingredients
- 1 kg lamb bones or game bones (and meat trimmings), chopped
- 200 g soup vegetables (cut into small pieces)
- 1 onion (diced)
- 2 garlic cloves (peeled)
- 1 tbsp tomato paste
- 250 ml red wine
- 1 spice
- 1 sprig thyme
- 1 sprig rosemary
- salt
Instructions
- 1. Preheat the oven to 180 degrees Celsius.
- 2. Place the lamb bones, vegetable stock mix, onion, and garlic in a casserole dish.
- 3. Roast the ingredients in the hot oven until they are dry and brown.
- 4. Remove the pot from the oven.
- 5. Stir the tomato paste into the roasted ingredients.
- 6. Place the pot on the stove and let the tomato paste sweat for a short time.
- 7. Deglaze the mixture with red wine.
- 8. Let the alcohol from the wine evaporate.
- 9. Pour in enough water to completely cover the bones.
- 10. Add the spice sachet, thyme, and rosemary to the broth.
- 11. Simmer the broth over low heat with the lid off.
- 12. Simmer for 2 to 3 hours.
- 13. Place a sieve lined with cheesecloth over a clean bowl.
- 14. Pour the finished broth through the sieve to clarify it.
- 15. Season the broth with salt to taste.
