  1. 1. Preheat the oven to 160 degrees Celsius. Set it to use both top and bottom heat.
  2. 2. Rinse the lamb meat briefly under cold water. Then pat it completely dry with a kitchen towel. Lay the meat flat on a work surface. If it does not lie flat on its own, cut it carefully so that it spreads out flat.
  3. 3. Peel the apples. Cut them into quarters and remove the core. Cut the apple pieces into very fine cubes.
  4. 4. Rinse the basil. Shake it dry to remove excess water. Pluck the leaves from the stems. Chop the leaves finely.
  5. 5. Mix the fine apple cubes with the cream cheese and the chopped basil in a bowl. Season the mixture with salt and pepper to taste.
  6. 6. Spread the apple cream cheese mixture evenly over the spread-out lamb meat. Roll the meat tightly. Tie the roast securely with kitchen twine so that it holds its shape.
  7. 7. Season the outside of the roast generously with salt and pepper.
  8. 8. Heat oil in a frying pan. Sear the lamb meat on all sides until it has a golden-brown color. This takes about two to three minutes per side.
  9. 9. Place the roast in a baking dish. Add some broth or water to the dish so that the bottom is covered. Put the dish in the preheated oven. Roast the meat for about 1.5 to 2 hours. Make sure it does not dry out.
  10. 10. Take the roast out of the oven. Remove it from the sauce. Remove the kitchen twine. Slice the meat into thick slices.
  11. 11. Pour the sauce from the baking dish into a pot. Mix some cornstarch with a little cold water and stir this into the hot sauce to thicken it slightly. Season the sauce with salt and pepper.
  12. 12. Serve the lamb meat slices immediately with the warm sauce.
