🍽️ Aromatic Lamb Roast with Potatoes

Ingredients
- 1 lamb leg
- Harissa (ready-made product)
- 2 large garlic cloves
- salt
- pepper (from the mill)
- 0.5 bunch rosemary
- 1 kg potatoes
- juice of one lemon
- 2 large onions
- 1 small can of chopped tomatoes (400 g)
- 2 bay leaves
- 1 cm cinnamon stick
- 60 g butter
- 125 ml red wine
Instructions
- 1. Peel the garlic cloves and cut them lengthwise into thin slivers.
- 2. Peel the onion and slice it into thin strips.
- 3. Use a sharp knife to score a diamond pattern into the entire surface of the lamb shank.
- 4. Coat the lamb shank thoroughly with the harissa sauce.
- 5. Insert one garlic sliver and one small sprig of rosemary alternately into the intersection points of the scored pattern.
- 6. Season the meat generously with salt and black pepper.
- 7. Place the shank into a greased roasting pan.
- 8. Preheat the oven to 200 degrees and roast the meat for 60 minutes.
- 9. After one hour, reduce the oven temperature to 180 degrees.
- 10. Peel the potatoes and make deep cuts into them that reach about half their thickness.
- 11. After the first cooking period, arrange the prepared potatoes around the lamb shank in the roasting pan.
- 12. Drizzle the potatoes with lemon juice.
- 13. Season the vegetables with salt and pepper.
- 14. Distribute the tomatoes and onion strips evenly over the vegetables.
- 15. Place small cubes of butter on top of the vegetables.
- 16. Pour red wine into the roasting pan.
- 17. Roast the dish for another 90 minutes at 180 degrees.
- 18. Turn the lamb shank occasionally during cooking to ensure even roasting.
- 19. Plate the lamb shank with the vegetables and sauce and serve hot.
