  2. 2. Peel the onion and slice it into thin strips.
  3. 3. Use a sharp knife to score a diamond pattern into the entire surface of the lamb shank.
  4. 4. Coat the lamb shank thoroughly with the harissa sauce.
  5. 5. Insert one garlic sliver and one small sprig of rosemary alternately into the intersection points of the scored pattern.
  6. 6. Season the meat generously with salt and black pepper.
  7. 7. Place the shank into a greased roasting pan.
  8. 8. Preheat the oven to 200 degrees and roast the meat for 60 minutes.
  9. 9. After one hour, reduce the oven temperature to 180 degrees.
  10. 10. Peel the potatoes and make deep cuts into them that reach about half their thickness.
  11. 11. After the first cooking period, arrange the prepared potatoes around the lamb shank in the roasting pan.
  12. 12. Drizzle the potatoes with lemon juice.
  13. 13. Season the vegetables with salt and pepper.
  14. 14. Distribute the tomatoes and onion strips evenly over the vegetables.
  15. 15. Place small cubes of butter on top of the vegetables.
