🍽️ Lamb Ossobuco

Ingredients
- 4 slices lamb shank (each approx. 300 g)
- flour
- 4 carrots
- 0.25 piece celeriac
- 6 stalks celery
- 400 g tomatoes
- 3 onions
- 3 garlic cloves
- 3 tbsp olive oil
- 125 ml lamb stock (jar)
- 125 ml dry red wine
- salt
- pepper (from the mill)
Instructions
- 1. Wash the vegetables thoroughly. Peel the carrots and celery stalks. Cut everything into small cubes. Crush the garlic cloves.
- 2. Season the lamb shank slices with salt and pepper. Coat them in flour so they are lightly covered. Fry them in batches in hot oil in a large pot until browned. Remove them from the pot and set aside.
- 3. Add the prepared vegetables to the remaining frying fat. Sauté them briefly. Pour in the wine and broth. Season the mixture again with salt and pepper.
- 4. Place the fried meat slices back into the pot. Cover them with the vegetables. Let the dish simmer under a lid for about one and a half hours on low heat.
- 5. Serve the tender lamb shanks together with the delicious vegetable sauce.
