  1. 1. Wash the vegetables thoroughly. Peel the carrots and celery stalks. Cut everything into small cubes. Crush the garlic cloves.
  2. 2. Season the lamb shank slices with salt and pepper. Coat them in flour so they are lightly covered. Fry them in batches in hot oil in a large pot until browned. Remove them from the pot and set aside.
  3. 3. Add the prepared vegetables to the remaining frying fat. Sauté them briefly. Pour in the wine and broth. Season the mixture again with salt and pepper.
  4. 4. Place the fried meat slices back into the pot. Cover them with the vegetables. Let the dish simmer under a lid for about one and a half hours on low heat.
  5. 5. Serve the tender lamb shanks together with the delicious vegetable sauce.
