🍽️ Tender Lamb Fillets with Crisp Snow Peas

Ingredients
- 8 Lamb Fillets (approx. 600 g)
- Salt
- Pepper (from the mill)
- 1 tsp. Cayenne Pepper
- 3 tbsp. Oil
- 200 g Snow Peas
- 1 Sprig Mint
- 250 g Whipping Cream
- 1 tbsp. Worcestershire Sauce
- 2 tbsp. Sherry
- 2 tbsp. Butter
- 1 tbsp. Balsamic Vinegar
- 40 ml White Wine
Instructions
- 1. Season the lamb fillets generously with salt and pepper.
- 2. Mix the cayenne pepper with one tablespoon of oil to form a paste.
- 3. Brush the fillets evenly with this oil paste.
- 4. Thoroughly wash the snow peas under running water.
- 5. Bring a pot of salted water to a boil.
- 6. Cook the snow peas in it for four minutes.
- 7. Drain the vegetables and immediately shock them with cold water to stop the cooking process.
- 8. Let the snow peas drain well.
- 9. Wash the mint and separate the leaves from the stems.
- 10. Gently pat the mint leaves dry with a kitchen towel.
- 11. Add cream, Worcestershire sauce, and sherry to a small pot.
- 12. Bring the sauce to a boil.
- 13. Let the sauce reduce slightly for about three minutes.
- 14. Heat one tablespoon of butter with the remaining oil in a large pan.
- 15. Fry the lamb fillets for two to three minutes until golden brown on all sides.
- 16. Remove the fillets from the pan and place them in a warm place, covered.
- 17. Deglaze the pan juices in the pan with balsamic vinegar and wine.
- 18. Let the liquid come to a brief boil.
- 19. Pour the liquid through a fine mesh sieve directly into the prepared sauce.
- 20. Finally, season the sauce to taste with salt and pepper.
- 21. Melt the remaining butter in a clean pan.
- 22. Add the snow peas and heat them while stirring constantly.
- 23. Lightly season the snow peas with salt.
- 24. Plate the lamb fillets on the plates.
- 25. Pour the sherry sauce over the meat.
- 26. Serve the warm snow peas as a side dish.
- 27. Garnish the dish with the fresh mint leaves.
- 28. Serve the food immediately while hot.
