  2. 2. Mix the cayenne pepper with one tablespoon of oil to form a paste.
  3. 3. Brush the fillets evenly with this oil paste.
  4. 4. Thoroughly wash the snow peas under running water.
  5. 5. Bring a pot of salted water to a boil.
  6. 6. Cook the snow peas in it for four minutes.
  7. 7. Drain the vegetables and immediately shock them with cold water to stop the cooking process.
  8. 8. Let the snow peas drain well.
  9. 9. Wash the mint and separate the leaves from the stems.
  10. 10. Gently pat the mint leaves dry with a kitchen towel.
  11. 11. Add cream, Worcestershire sauce, and sherry to a small pot.
  12. 12. Bring the sauce to a boil.
  13. 13. Let the sauce reduce slightly for about three minutes.
  14. 14. Heat one tablespoon of butter with the remaining oil in a large pan.
  15. 15. Fry the lamb fillets for two to three minutes until golden brown on all sides.
