🍽️ Tender Lamb with Tomatoes, Apricots, Onions, and Pistachios from the Tajine

Ingredients
- 1 kg lamb meat (kitchen-ready, from the shank)
- 2 onions
- 400 g ripe apricots
- 6 tomatoes
- 2 tbsp vegetable oil
- salt
- pepper (from the mill)
- 250 ml meat broth
- 1 small box saffron threads
- 172 tsp ground cumin
- 1 pinch cinnamon
- 1 pinch cardamom
- 2 tbsp chive rings (and chive flowers)
- 3 tbsp chopped pistachios
Instructions
- 1. Rinse the meat under running water and then pat it completely dry with a kitchen towel.
- 2. Cut the dry meat into bite-sized cubes.
- 3. Peel the papery skin off the onions.
- 4. Cut the peeled onions into wedges.
- 5. Carefully separate the individual onion layers from each other.
- 6. Rinse the apricots under running water.
- 7. Cut the apricots into quarters.
- 8. Remove the pits from the apricot pieces.
- 9. Break the pitted apricots into coarse pieces.
- 10. Pour boiling water over the tomatoes briefly to blanch them (cook briefly in boiling water).
- 11. Shock the tomatoes immediately with cold water to stop the cooking process.
- 12. Peel the loosened skin off the tomatoes.
- 13. Cut the peeled tomatoes into quarters.
- 14. Remove the core from the tomato pieces.
- 15. Heat the oil in the tajine.
- 16. Fry the meat in batches, searing it well on all sides.
- 17. Season the seared meat with salt and pepper.
- 18. Remove the meat from the tajine and set it aside.
- 19. Sauté the apricots in the remaining frying fat.
- 20. Remove the apricots from the tajine and set them aside as well.
- 21. Add the onions to the tajine.
- 22. Sauté the onions briefly.
- 23. Return the prepared meat to the tajine.
- 24. Pour the meat stock over the meat.
- 25. Close the tajine with the lid.
- 26. Let the meat simmer gently over medium heat for approx. 1 hour.
- 27. After half the cooking time, add the apricots, tomatoes, and spices.
- 28. Mix everything well together.
- 29. Let the ingredients simmer together with the meat.
- 30. Add more broth if necessary.
- 31. Taste the dish at the end.
- 32. Season if necessary.
- 33. Serve the food in a baking dish.
- 34. Sprinkle the dish with chive rolls.
- 35. Sprinkle the dish additionally with chive blossoms.
- 36. Sprinkle the dish with chopped pistachios.
- 37. Serve the dish warm.
