  1. 1. Rinse the meat under running water and then pat it completely dry with a kitchen towel.
  2. 2. Cut the dry meat into bite-sized cubes.
  3. 3. Peel the papery skin off the onions.
  4. 4. Cut the peeled onions into wedges.
  5. 5. Carefully separate the individual onion layers from each other.
  6. 6. Rinse the apricots under running water.
  7. 7. Cut the apricots into quarters.
  8. 8. Remove the pits from the apricot pieces.
  9. 9. Break the pitted apricots into coarse pieces.
  10. 10. Pour boiling water over the tomatoes briefly to blanch them (cook briefly in boiling water).
  11. 11. Shock the tomatoes immediately with cold water to stop the cooking process.
  12. 12. Peel the loosened skin off the tomatoes.
  13. 13. Cut the peeled tomatoes into quarters.
  14. 14. Remove the core from the tomato pieces.
  15. 15. Heat the oil in the tajine.
  16. 16. Fry the meat in batches, searing it well on all sides.
  17. 17. Season the seared meat with salt and pepper.
  18. 18. Remove the meat from the tajine and set it aside.
  19. 19. Sauté the apricots in the remaining frying fat.
  20. 20. Remove the apricots from the tajine and set them aside as well.
  21. 21. Add the onions to the tajine.
  22. 22. Sauté the onions briefly.
  23. 23. Return the prepared meat to the tajine.
  24. 24. Pour the meat stock over the meat.
  25. 25. Close the tajine with the lid.
  26. 26. Let the meat simmer gently over medium heat for approx. 1 hour.
  27. 27. After half the cooking time, add the apricots, tomatoes, and spices.
  28. 28. Mix everything well together.
  29. 29. Let the ingredients simmer together with the meat.
  30. 30. Add more broth if necessary.
  31. 31. Taste the dish at the end.
  32. 32. Season if necessary.
  33. 33. Serve the food in a baking dish.
  34. 34. Sprinkle the dish with chive rolls.
  35. 35. Sprinkle the dish additionally with chive blossoms.
  36. 36. Sprinkle the dish with chopped pistachios.
  37. 37. Serve the dish warm.
