🍽️ Grilled Lamb with Roasted Vegetables

Ingredients
- 800 g lamb loin (2 lamb loins; trimmed and ready for cooking)
- salt
- pepper
- 2 tbsp olive oil
- 300 g cooked potatoes
- 250 g baby corn cobs
- 150 g small shallots
- 1 tbsp fresh chopped rosemary
Instructions
- 1. Rinse the lamb meat under cold water.
- 2. Pat the meat completely dry with a kitchen towel.
- 3. Cut each lamb rack into two halves.
- 4. Season the meat pieces with salt and pepper.
- 5. Brush the meat thinly with some oil.
- 6. Preheat the grill and place the meat on the grate.
- 7. Keep a safe distance from the hot embers.
- 8. Grill the lamb for about 20 minutes.
- 9. Turn the meat regularly during the cooking time.
- 10. Peel the potatoes.
- 11. Cut the potatoes into wedges.
- 12. Rinse the corn under cold water.
- 13. Let the corn drain well in a sieve.
- 14. Peel the shallots.
- 15. Place the potato wedges, corn, and shallots on a grilling tray.
- 16. Drizzle the vegetables with the remaining oil.
- 17. Season the vegetables with salt and pepper.
- 18. Place the grilling tray on the grill.
- 19. Cook the vegetables for about 10 minutes.
- 20. Roast the vegetables until golden brown.
- 21. Sprinkle fresh rosemary over the finished vegetables.
- 22. Serve the vegetables together with the grilled lamb.
