  1. 1. Rinse the lamb meat under cold water.
  2. 2. Pat the meat dry with a kitchen towel.
  3. 3. Cut the lamb meat into bite-sized cubes.
  4. 4. Wash the thyme sprigs under running water.
  5. 5. Shake the sprigs dry.
  6. 6. Pluck the small thyme leaves from the stems.
  7. 7. Put the olive oil, lemon juice, salt, pepper, and thyme leaves into a bowl.
  8. 8. Stir the ingredients in the bowl well.
  9. 9. Place the meat in the marinade and turn it so it is covered everywhere.
  10. 10. Cover the bowl.
  11. 11. Let the meat marinate in the refrigerator for 3 to 4 hours.
  12. 12. Wash the tomatoes under running water.
  13. 13. Peel the shallots.
  14. 14. Halve the shallots.
  15. 15. Wash the bell peppers under running water.
  16. 16. Remove the inside of the bell peppers (core).
  17. 17. Cut the bell peppers into bite-sized pieces.
  18. 18. Take the meat out of the marinade.
  19. 19. Let the meat drip dry for a moment.
  20. 20. Thread alternating pieces of meat and vegetables onto the skewers.
  21. 21. Preheat the grill.
  22. 22. Place the skewers on the hot grill.
  23. 23. Grill the skewers for 10 to 15 minutes.
  24. 24. Brush the skewers repeatedly with the remaining marinade while grilling.
  25. 25. Wash the lemon under hot water.
  26. 26. Pat the lemon dry.
  27. 27. Cut the lemon into wedges.
  28. 28. Place the finished skewers on four plates.
  29. 29. Garnish the plates with the lemon wedges.
