🍽️ Lamb and Vegetable Skewers with Herb Dip

Ingredients
- 350 g lamb fillet (cut into cubes)
- 2 medium zucchini (cut into large pieces)
- 250 g cherry tomatoes
- 1 large fennel bulb (cut into large pieces, blanched in boiling salted water for 3 Min.)

- 1 bunch arugula
- 2 garlic cloves
- 150 ml olive oil (cold-pressed)
- salt
- pepper (from the mill)
Instructions
- 1. Thread the lamb fillet, zucchini, cherry tomatoes, and blanched fennel pieces alternately onto the wooden skewers. Heat 3 tablespoons of oil in a large pan and sear the skewers on all sides until well-browned. Season with salt and pepper.
- 2. Wash the arugula and spin it dry, then chop it finely. Peel the garlic. Put the arugula, oil, garlic, salt, and pepper into a blender and puree until smooth to make a pesto. Add a little more oil if needed to reach the desired consistency.
