  1. 1. Peel the onions and cut them into small cubes. Cut the meat into bite-sized pieces. Heat the oil in the pan and fry the meat in batches until browned all over.
  2. 2. Add the onions and let them soften. Season everything with the spices and add the currants.
  3. 3. Cook the dish covered on low heat for about 1 hour. Add a little water from time to time.
  4. 4. In the meantime, wash the apricots, remove the pits, and cut them into quarters. Add half of the apricots to the pan, stir everything well, and season to taste.
  5. 5. Let the ragout simmer for another 30 minutes.
  6. 6. Add the remaining apricots to the pot 10 minutes before the end of the cooking time and let them cook along. Do not stir anymore to prevent the apricots from falling apart.
  7. 7. Serve the dish with couscous (prepared according to package instructions).
