🍰 Lactose-free Waffles

Ingredients
- 200 g lactose-free butter
- 150 g raw cane sugar
- 4 eggs
- 200 g spelt flour Type 1050
- 0.25 tsp cinnamon
- 1 tsp baking powder
- 20 g ground almond kernels
- 100 ml lactose-free milk (3.5% fat)
- 2 tsp rapeseed oil
- 1 tsp powdered sugar from raw cane sugar
Instructions
- 1. Beat the butter with the sugar until creamy.
- 2. Add the eggs one by one.
- 3. Whisk the mixture until it is frothy.
- 4. Mix the flour, cinnamon, baking powder, and almonds in a separate bowl.
- 5. Stir the dry mixture and the milk alternately into the egg mixture.
- 6. Stir until you have a smooth batter.
- 7. Let the batter rest for 10 to 15 minutes.
- 8. Preheat the waffle iron.
- 9. Brush the waffle iron lightly with a little oil.
- 10. Place one small ladleful of batter in the center of the iron.
- 11. Bake the waffles until golden brown.
- 12. Repeat this process until you have baked a total of 10 waffles.
- 13. Place the finished waffles on a plate.
- 14. Dust them with powdered sugar.
- 15. Serve them best while still warm.
