🍽️ Creamy Laksa Soup with Shrimp

Ingredients
- 150 g shrimp
- 400 ml chicken broth
- 400 ml coconut milk (can, unsweetened)
- 150 g egg noodles
- 1 tsp. chili powder
- 2 tsp. curry powder
- salt
- pepper (from the mill)
- 2 tbsp. lime juice
- 2 tbsp. parsley
- 0.5 lime (in wedges)
Instructions
- 1. Bring the broth to a boil in a pot.
- 2. Add the noodles to the boiling broth.
- 3. Cook the noodles for about 5 minutes.
- 4. Reduce the heat to a low setting.
- 5. Add the shrimp to the broth.
- 6. Add the coconut milk to the broth.
- 7. Let the soup heat through gently until the shrimp are cooked.
- 8. Season the soup with salt.
- 9. Add chili powder.
- 10. Add curry powder.
- 11. Add black pepper.
- 12. Add lime juice.
- 13. Taste the soup and adjust the seasoning if needed.
- 14. Pour the finished soup into deep soup bowls.
- 15. Sprinkle fresh parsley over the soup.
- 16. Serve with a lime wedge on the side.
