  1. 1. Wash the unwaxed lemon under hot water.
  2. 2. Dry the lemon thoroughly.
  3. 3. Cut 12 nice slices from the lemon.
  4. 4. Use the remaining lemon scraps for other purposes.
  5. 5. Whisk the lemon juice with the sugar.
  6. 6. Add the vanilla oil to the mixture.
  7. 7. Season the marinade with a little salt and pepper.
  8. 8. Whisk the ingredients well together.
  9. 9. Set aside the dill for later.
  10. 10. Wash the salmon fillet.
  11. 11. Pat the salmon dry with a kitchen towel.
  12. 12. Cut the salmon flesh into small pieces.
  13. 13. Finely chop the salmon pieces.
  14. 14. Mix the chopped salmon with the dill marinade.
  15. 15. Place the bowl with the salmon in the refrigerator for 10 minutes.
  16. 16. Take the salmon out of the refrigerator.
  17. 17. Season the tartare with salt and pepper to taste.
  18. 18. Take the dill out of the marinade.
  19. 19. Use a cookie scoop to form walnut-sized portions of the salmon tartare.
  20. 20. Try to take as little liquid as possible with the portion.
  21. 21. Place one portion of salmon tartare on each of the 12 lemon slices.
