🍽️ Citrus Salmon Tartare with Dill

Ingredients
- 2 untreated lemons
- 40 ml lemon juice
- 1 tbsp chopped dill
- salt
- 1 pinch sugar
- white pepper
- 0.5 tsp grated lemon zest
- 4 tbsp vanilla flavoring
- 250 g very fresh salmon fillet
Instructions
- 1. Wash the unwaxed lemon under hot water.
- 2. Dry the lemon thoroughly.
- 3. Cut 12 nice slices from the lemon.
- 4. Use the remaining lemon scraps for other purposes.
- 5. Whisk the lemon juice with the sugar.
- 6. Add the vanilla oil to the mixture.
- 7. Season the marinade with a little salt and pepper.
- 8. Whisk the ingredients well together.
- 9. Set aside the dill for later.
- 10. Wash the salmon fillet.
- 11. Pat the salmon dry with a kitchen towel.
- 12. Cut the salmon flesh into small pieces.
- 13. Finely chop the salmon pieces.
- 14. Mix the chopped salmon with the dill marinade.
- 15. Place the bowl with the salmon in the refrigerator for 10 minutes.
- 16. Take the salmon out of the refrigerator.
- 17. Season the tartare with salt and pepper to taste.
- 18. Take the dill out of the marinade.
- 19. Use a cookie scoop to form walnut-sized portions of the salmon tartare.
- 20. Try to take as little liquid as possible with the portion.
- 21. Place one portion of salmon tartare on each of the 12 lemon slices.
