  1. 1. Pat the salmon dry with a paper towel.
  2. 2. Cut the fish into approx. 1 cm cubes.
  3. 3. Mix the salmon cubes with lemon juice, salt, pepper, and grapeseed oil.
  4. 4. Season the marinade with salt and pepper to taste.
  5. 5. Place the bowl covered in a cool place.
  6. 6. Wash the spring onions and pat them dry.
  7. 7. Chop the spring onions very finely.
  8. 8. Stir the chopped onions, chive rings, and milk into the cream cheese mixture.
  9. 9. Season the cream cheese mixture with salt and pepper.
  10. 10. Drain the pickled tomatoes well.
  11. 11. Cut the tomatoes into thin strips.
  12. 12. Wash the cucumber and pat it dry.
  13. 13. Slice or shave the cucumber into very thin rounds.
  14. 14. Lightly salt the cucumber slices.
  15. 15. Place some tomato strips on the plate.
  16. 16. Add a mound of salmon tartare on top of the tomatoes.
  17. 17. Cover the salmon with the cream cheese mixture.
  18. 18. Arrange the cucumber slices on top of the cream.
  19. 19. Garnish the dish with extra tomato strips and chive rings if desired.
  20. 20. Serve the dish immediately.
