🍽️ Salmon Strips in Creamy Wild Garlic Soup

Ingredients
- 800 ml vegetable broth
- 200 ml whipping cream
- salt
- pepper (from the mill)
- cayenne pepper
- 80 g young wild garlic leaves (approx. 2 handfuls)
- 1 garlic clove
- 2 slices whole grain bread
- 4 slices smoked salmon
- 2 tbsp sour cream
Instructions
- 1. Pour the vegetable broth and the cream into a pot.
- 2. Bring the mixture to a boil while stirring.
- 3. Season the soup with salt, pepper, and a pinch of cayenne pepper.
- 4. Wash the wild garlic thoroughly and shake it dry.
- 5. Set aside four nice wild garlic leaves for decoration.
- 6. Finely chop the remaining wild garlic.
- 7. Add the chopped wild garlic to the hot soup.
- 8. Let the soup steep for five minutes without boiling it again.
- 9. Peel the garlic clove.
- 10. Toast the bread in the pan or toaster.
- 11. Rub the warm toast bread with the garlic clove.
- 12. Cut the bread into small cubes (croutons).
- 13. Cut the salmon into thin strips.
- 14. Cut the four reserved wild garlic leaves into thin strips as well.
- 15. Serve the soup in bowls.
- 16. Top the soup with the croutons and the salmon strips.
- 17. Garnish with the fine wild garlic strips.
- 18. Place a dollop of sour cream on each plate.
