🍽️ Crispy Salmon Patties with Fresh Mango Salsa

Ingredients
- 1 shallot
- 1 garlic clove
- 5 g butter (1 tsp)
- 500 g salmon fillet
- 10 g parsley (0.5 bunch)
- 30 g whole wheat breadcrumbs (3 tbsp)
- salt
- 2 tbsp lime juice
- pepper
- 1 tbsp olive oil
- 1 cucumber
- 300 g small mango (1 small mango)
- 10 g cilantro (0.5 bunch)
- 1 tbsp grapeseed oil
- 1 pinch raw sugar
- 40 g watercress (1 handful)
Instructions
- 1. Peel the shallot and the garlic clove.
- 2. Dice the shallot and garlic into very fine cubes.
- 3. Heat the butter in a frying pan.
- 4. Sauté the shallot and garlic cubes over medium heat until translucent.
- 5. Rinse the salmon fillet under cold water.
- 6. Pat the salmon dry with a kitchen towel.
- 7. Chop the salmon very finely.
- 8. Wash the parsley.
- 9. Shake the parsley dry.
- 10. Finely chop the parsley.
- 11. Mix the chopped salmon, parsley, egg, sautéed onions, garlic, and breadcrumbs in a bowl.
- 12. Knead the mixture into a smooth dough.
- 13. Season the dough with salt, one tablespoon of lime juice, and pepper.
- 14. Shape eight small patties from the mixture.
- 15. Heat the olive oil in a frying pan.
- 16. Fry the patties on each side for four to five minutes until golden brown.
- 17. Wash the cucumber.
- 18. Halve the cucumber lengthwise.
- 19. Remove the seeds from the cucumber halves.
- 20. Dice the cucumber finely.
- 21. Peel the mango.
- 22. Separate the mango flesh from the pit.
- 23. Cut the mango flesh into small cubes.
- 24. Wash the coriander.
- 25. Shake the coriander dry.
- 26. Chop the coriander.
- 27. Place the diced cucumber, mango, and coriander into a bowl.
- 28. Drizzle grapeseed oil over the salsa ingredients.
- 29. Add a pinch of sugar.
- 30. Add the remaining lime juice.
- 31. Season the salsa with salt.
- 32. Mix all salsa ingredients well.
- 33. Wash the cress.
- 34. Shake the cress dry.
- 35. Distribute the salmon patties and salsa onto four plates.
- 36. Garnish the plates with the cress.
