  4. 4. Sauté the shallot and garlic cubes over medium heat until translucent.
  5. 5. Rinse the salmon fillet under cold water.
  6. 6. Pat the salmon dry with a kitchen towel.
  7. 7. Chop the salmon very finely.
  8. 8. Wash the parsley.
  9. 9. Shake the parsley dry.
  10. 10. Finely chop the parsley.
  11. 11. Mix the chopped salmon, parsley, egg, sautéed onions, garlic, and breadcrumbs in a bowl.
  12. 12. Knead the mixture into a smooth dough.
  13. 13. Season the dough with salt, one tablespoon of lime juice, and pepper.
  14. 14. Shape eight small patties from the mixture.
  15. 15. Heat the olive oil in a frying pan.
  16. 16. Fry the patties on each side for four to five minutes until golden brown.

  18. 18. Halve the cucumber lengthwise.
  19. 19. Remove the seeds from the cucumber halves.

  27. 27. Place the diced cucumber, mango, and coriander into a bowl.
  28. 28. Drizzle grapeseed oil over the salsa ingredients.
  29. 29. Add a pinch of sugar.
  30. 30. Add the remaining lime juice.
  31. 31. Season the salsa with salt.
  32. 32. Mix all salsa ingredients well.
  33. 33. Wash the cress.
  34. 34. Shake the cress dry.
  35. 35. Distribute the salmon patties and salsa onto four plates.
  36. 36. Garnish the plates with the cress.
