🍽️ Grilled Salmon Steaks with Herb Marinade

Ingredients
- 8 salmon steaks (approx. 120 g each)
- 50 ml olive oil
- 1 tsp dried Italian herbs
- 1 unwaxed lime (juice and zest)
- pepper (from the mill)
- salt
- 2 handfuls young sorrel
Instructions
- 1. Rinse the salmon under running water and then pat it completely dry with a kitchen towel.
- 2. Whisk the olive oil in a small bowl with the herbs, the lime juice, the lime zest, and some black pepper.
- 3. Brush the salmon steaks generously with the marinade.
- 4. Preheat your grill and place the salmon pieces on the hot grate.
- 5. Grill the salmon for three to four minutes on the first side.
- 6. Turn the pieces and grill them for another three to four minutes on the second side.
- 7. Brush the salmon with the remaining marinade repeatedly during the grilling process.
- 8. Season the finished salmon steaks with salt to taste.
- 9. Wash the sorrel under cold water and remove any dirty leaves.
- 10. Let the sorrel drain well.
- 11. Lay out the sorrel on the serving plates.
- 12. Place the grilled salmon steaks on the bed of sorrel.
- 13. Serve the dishes with herb butter if desired.
