  1. 1. Rinse the salmon under running water and then pat it completely dry with a kitchen towel.
  2. 2. Whisk the olive oil in a small bowl with the herbs, the lime juice, the lime zest, and some black pepper.
  3. 3. Brush the salmon steaks generously with the marinade.
  4. 4. Preheat your grill and place the salmon pieces on the hot grate.
  5. 5. Grill the salmon for three to four minutes on the first side.
  6. 6. Turn the pieces and grill them for another three to four minutes on the second side.
  7. 7. Brush the salmon with the remaining marinade repeatedly during the grilling process.
  8. 8. Season the finished salmon steaks with salt to taste.
  9. 9. Wash the sorrel under cold water and remove any dirty leaves.
  10. 10. Let the sorrel drain well.
  11. 11. Lay out the sorrel on the serving plates.
  12. 12. Place the grilled salmon steaks on the bed of sorrel.
  13. 13. Serve the dishes with herb butter if desired.
