🍽️ Salmon steak with herb crust

Ingredients
- 4 salmon cutlets (á 180-200 g)
- salt
- pepper (from the mill)
- 2 tbsp vegetable oil
- 1 clove of garlic
- 1 sprig parsley
- 1 sprig basil
- 2 chives
- 1 sprig dill
- 125 g butter
- 0.5 tsp lemon zest
- 1 tbsp freshly grated parmesan
- 80 g breadcrumbs
- 1 untreated lemon (divided into slices)
Instructions
- 1. Rinse the salmon steaks under running water.
- 2. Pat the fish completely dry with a kitchen towel.
- 3. Season the steaks on both sides with salt and pepper.
- 4. Heat oil in a large frying pan.
- 5. Sear the salmon steaks until they are golden brown on all sides.
- 6. Remove the fish from the pan.
- 7. Place the steaks on a baking sheet lined with baking paper.
- 8. Switch the oven to the grill function and preheat it.
- 9. Peel the garlic clove.
- 10. Wash the fresh herbs under cold water.
- 11. Shake the herbs dry.
- 12. Finely chop the herb leaves.
- 13. Melt the butter in a small pan.
- 14. Press the garlic directly into the melted butter.
- 15. Sauté the garlic briefly until it is soft and translucent.
- 16. Stir the chopped herbs into the butter mixture.
- 17. Add the lemon zest to the pan.
- 18. Mix the grated cheese into the mixture.
- 19. Fold in the breadcrumbs.
- 20. Season the herb butter with salt and pepper.
- 21. Spread the herb butter evenly over the salmon steaks.
- 22. Place the tray in the preheated oven.
- 23. Gratin the steaks until the crust is golden brown.
- 24. Remove the tray from the oven.
- 25. Cut the lemon into thin wedges.
- 26. Warm the serving plates.
- 27. Plate the salmon steaks.
- 28. Garnish the dish with the lemon wedges.
- 29. Serve the food hot immediately.
