Ingredients
- 1200 g kitchen-ready salmon trout (2 kitchen-ready salmon trout)
- 0.5 bunch parsley
- 2 kg coarse sea salt
- 6 egg whites
- pepper
Instructions
- 1. Wash the fish thoroughly and pat them dry with a kitchen towel.
- 2. Rub the fish inside and out with pepper.
- 3. Wash the parsley and place it inside the belly cavities of the fish.
- 4. Preheat the oven to 200 degrees Celsius.
- 5. Put the salt into a bowl.
- 6. Beat the egg whites until slightly frothy.
- 7. Stir the beaten egg whites into the salt.
- 8. Add a little water if necessary until a moldable dough forms.
- 9. Spread half of the salt dough onto a baking sheet.
- 10. Place the fish on top with a spacing of about 3 centimeters.
- 11. Cover the fish completely with the remaining salt dough.
- 12. Smooth the surface with a wet palette knife.
- 13. Bake the fish in the oven for about 30 minutes.
- 14. Serve the fish in the intact salt crust.
- 15. Break the crust open only directly at the table.
- 16. Serve carrot and broccoli vegetables as a side dish.
