  1. 1. Rinse the fresh basil under cold water.
  2. 2. Gently pat the leaves dry with a kitchen towel.
  3. 3. Pluck the leaves off the stems.
  4. 4. Take half of the basil leaves.
  5. 5. Roughly chop this half with a large knife.
  6. 6. Put the peppercorns into a mortar.
  7. 7. Crush the seeds coarsely.
  8. 8. Line a baking tray with baking paper.
  9. 9. Rinse the salmon fillet briefly.
  10. 10. Pat the fish dry.
  11. 11. Place the fillet skin-side down on the tray.
  12. 12. Mix the salt with the crushed pepper.
  13. 13. Rub the salmon fillet with this spice mixture.
  14. 14. Sprinkle the chopped basil over the fish.
  15. 15. Preheat the oven to 80 degrees.
  16. 16. Cook the salmon in the oven for about 40 minutes.
  17. 17. Do not use the fan-assisted (convection) function.
  18. 18. Use gas oven setting 1.
  19. 19. Rinse the lemon under hot water.
  20. 20. Dry the skin.
  21. 21. Grate the lemon zest finely.
  22. 22. Cut the lemon in half.
  23. 23. Squeeze the juice from the lemon.
  24. 24. Put the lemon zest into a small bowl.
  25. 25. Add the lemon juice.
  26. 26. Add olive oil.
  27. 27. Add honey.
  28. 28. Whisk the sauce well.
  29. 29. Take the salmon fillet out of the oven.
  30. 30. Place the fish on a plate.
  31. 31. Drizzle the salmon with the lemon sauce.
  32. 32. Let the fish rest for 8 to 10 minutes.
  33. 33. Garnish the salmon with the remaining fresh basil.
  34. 34. Serve the dish.
