🍽️ Tender Oven Salmon with Lemon-Basil Dressing

Ingredients
- 8 sprigs basil
- 3 tsp black peppercorns
- 800 g thin piece salmon fillet (with skin)
- 1 tbsp Fleur de sel
- 1 organic lemon
- 2 tbsp olive oil
- 1 tbsp liquid honey
Instructions
- 1. Rinse the fresh basil under cold water.
- 2. Gently pat the leaves dry with a kitchen towel.
- 3. Pluck the leaves off the stems.
- 4. Take half of the basil leaves.
- 5. Roughly chop this half with a large knife.
- 6. Put the peppercorns into a mortar.
- 7. Crush the seeds coarsely.
- 8. Line a baking tray with baking paper.
- 9. Rinse the salmon fillet briefly.
- 10. Pat the fish dry.
- 11. Place the fillet skin-side down on the tray.
- 12. Mix the salt with the crushed pepper.
- 13. Rub the salmon fillet with this spice mixture.
- 14. Sprinkle the chopped basil over the fish.
- 15. Preheat the oven to 80 degrees.
- 16. Cook the salmon in the oven for about 40 minutes.
- 17. Do not use the fan-assisted (convection) function.
- 18. Use gas oven setting 1.
- 19. Rinse the lemon under hot water.
- 20. Dry the skin.
- 21. Grate the lemon zest finely.
- 22. Cut the lemon in half.
- 23. Squeeze the juice from the lemon.
- 24. Put the lemon zest into a small bowl.
- 25. Add the lemon juice.
- 26. Add olive oil.
- 27. Add honey.
- 28. Whisk the sauce well.
- 29. Take the salmon fillet out of the oven.
- 30. Place the fish on a plate.
- 31. Drizzle the salmon with the lemon sauce.
- 32. Let the fish rest for 8 to 10 minutes.
- 33. Garnish the salmon with the remaining fresh basil.
- 34. Serve the dish.
