  1. 1. Rinse the salmon fillet under cold water.
  2. 2. Pat the fish dry with a kitchen towel.
  3. 3. Cut the fillet into 8 roughly equal pieces.
  4. 4. Preheat the oven to 240 degrees Celsius with top and bottom heat.
  5. 5. Grease an ovenproof dish with some fat.
  6. 6. Mix the goat cheese with the breadcrumbs.
  7. 7. Season the cheese and breadcrumb mixture with salt and pepper.
  8. 8. Place the fish pieces into the prepared dish.
  9. 9. Salt and pepper the fish.
  10. 10. Distribute the goat cheese breadcrumb mixture evenly over the fish.
  11. 11. Place the dish in the oven.
  12. 12. Bake the fish for approx. 10 minutes.
  13. 13. Pluck the herbs from the stems.
  14. 14. Stir the cranberries with vinegar and oil.
  15. 15. Season the vinaigrette with honey, salt and pepper.
  16. 16. Drizzle the vinaigrette over the herbs.
  17. 17. Arrange the herbs on plates.
  18. 18. Place the finished fish on the herbs.
