🍽️ Salmon fillet with goat cheese topping and herbs

Ingredients
- 700 g salmon fillet
- fat (for the dish)
- 150 g goat cream cheese
- 3 tbsp breadcrumbs
- salt
- pepper (from the mill)
- 1 bunch watercress
- 1 bunch parsley
- 1 bunch dill
- 1 bunch chervil
- 2 tbsp lovage (coarsely chopped)
- 1 tbsp lingonberry jam
- 2 tbsp apple cider vinegar
- 2 tbsp rapeseed oil
- honey
Instructions
- 1. Rinse the salmon fillet under cold water.
- 2. Pat the fish dry with a kitchen towel.
- 3. Cut the fillet into 8 roughly equal pieces.
- 4. Preheat the oven to 240 degrees Celsius with top and bottom heat.
- 5. Grease an ovenproof dish with some fat.
- 6. Mix the goat cheese with the breadcrumbs.
- 7. Season the cheese and breadcrumb mixture with salt and pepper.
- 8. Place the fish pieces into the prepared dish.
- 9. Salt and pepper the fish.
- 10. Distribute the goat cheese breadcrumb mixture evenly over the fish.
- 11. Place the dish in the oven.
- 12. Bake the fish for approx. 10 minutes.
- 13. Pluck the herbs from the stems.
- 14. Stir the cranberries with vinegar and oil.
- 15. Season the vinaigrette with honey, salt and pepper.
- 16. Drizzle the vinaigrette over the herbs.
- 17. Arrange the herbs on plates.
- 18. Place the finished fish on the herbs.
