  2. 2. Remove tough stems and any damaged leaves.
  3. 3. Bring a pot of water with a pinch of salt to a boil.
  4. 4. Add the spinach to the boiling water and let it wilt briefly (blanch).
  5. 5. Drain the spinach and rinse it immediately with cold water to stop the cooking process.
  6. 6. Let the spinach drain well.
  7. 7. Take about one tablespoon of the spinach and chop it finely.
  8. 8. Wash the lemon and dry it.
  9. 9. Cut the lemon in half.
  10. 10. Squeeze the juice from one of the lemon halves.
  11. 11. Peel the skin from the remaining lemon half.
  12. 12. Slice the peeled lemon half into thin slices.
  13. 13. Grate the peeled skin finely to extract lemon aroma.
  14. 14. Squeeze the remaining spinach firmly to remove excess liquid.
  15. 15. Fluff up the squeezed spinach again.
  16. 16. Heat one tablespoon of butter in a pan.
  17. 17. Add the spinach and lemon slices to the hot butter.
  18. 18. Fry the spinach until all the liquid has evaporated.
  19. 19. Season the spinach with salt, pepper, and a splash of lemon juice.
  20. 20. Keep the spinach warm until the salmon is ready.
  21. 21. Divide the salmon fillets into smaller portions if necessary.
  22. 22. Drizzle the salmon with the freshly squeezed lemon juice.
  23. 23. Season the salmon fillets with salt and pepper.
  24. 24. Heat one tablespoon of butter in a non-stick pan.
  25. 25. Fry the salmon fillets for about two minutes on each side.
