  1. 1. Wash the celery thoroughly and remove tough fibers. Cut the stalks lengthwise into four strips and then divide them into pieces about 7 centimeters long.
  2. 2. Pick out any bad leaves from the spinach, wash it, and spin it dry so it does not become watery.
  3. 3. Peel the garlic clove and the piece of ginger. Cut both ingredients into very small cubes.
  4. 4. Heat the oil in a large pan. Add the garlic and ginger and sauté them briefly until fragrant.
  5. 5. Add the cut celery pieces and the spinach to the pan. Sauté the vegetables briefly together.
  6. 6. Deglaze the vegetables with the vegetable broth. Then pour in the vinegar.
  7. 7. Sprinkle the chili flakes and sesame seeds over the vegetables. Let everything simmer on medium heat for about 10 minutes.
  8. 8. Wash the salmon fillets and pat them completely dry with a kitchen towel.
  9. 9. Cut the salmon into four equal portions.
  10. 10. Season the fish pieces with salt and pepper.
  11. 11. Heat oil in a second, clean pan. Fry the salmon in the hot oil on all sides until golden brown.
  12. 12. Reduce the heat on the pan. Let the fish cook in it until it is fully cooked through.
  13. 13. Season the cooked vegetables with a little soy sauce.
  14. 14. Warm the serving plates so that the food stays hot.
  15. 15. Plate the vegetables and salmon on the pre-warmed plates and serve immediately.
