🍽️ Sesame Salmon with Green Vegetables

Ingredients
- 6 stalks celery
- 250 g fresh spinach
- 2 cm fresh ginger
- 2 garlic cloves
- 2 tbsp sesame oil
- 300 ml vegetable broth
- 1 tbsp white wine vinegar
- 0.5 tsp chili flakes
- 1 tbsp white sesame seeds
- 600 g salmon fillet (kitchen-ready, skinless)
- salt
- pepper (from the mill)
- sweet soy sauce
Instructions
- 1. Wash the celery thoroughly and remove tough fibers. Cut the stalks lengthwise into four strips and then divide them into pieces about 7 centimeters long.
- 2. Pick out any bad leaves from the spinach, wash it, and spin it dry so it does not become watery.
- 3. Peel the garlic clove and the piece of ginger. Cut both ingredients into very small cubes.
- 4. Heat the oil in a large pan. Add the garlic and ginger and sauté them briefly until fragrant.
- 5. Add the cut celery pieces and the spinach to the pan. Sauté the vegetables briefly together.
- 6. Deglaze the vegetables with the vegetable broth. Then pour in the vinegar.
- 7. Sprinkle the chili flakes and sesame seeds over the vegetables. Let everything simmer on medium heat for about 10 minutes.
- 8. Wash the salmon fillets and pat them completely dry with a kitchen towel.
- 9. Cut the salmon into four equal portions.
- 10. Season the fish pieces with salt and pepper.
- 11. Heat oil in a second, clean pan. Fry the salmon in the hot oil on all sides until golden brown.
- 12. Reduce the heat on the pan. Let the fish cook in it until it is fully cooked through.
- 13. Season the cooked vegetables with a little soy sauce.
- 14. Warm the serving plates so that the food stays hot.
- 15. Plate the vegetables and salmon on the pre-warmed plates and serve immediately.
