Ingredients
- 3 bell peppers
- 1 garlic clove
- 1 shallot
- 2 salmon fillets
- 10 g ginger (1 piece)
- 2 tbsp olive oil
- dried thyme
- salt
- pepper
- 50 ml vegetable broth
- 100 g couscous
Instructions
- 1. Wash the bell peppers thoroughly.
- 2. Halve the bell peppers and remove the inside.
- 3. Cut the peppers into thin strips.
- 4. Peel the garlic clove and the shallot.
- 5. Finely chop the garlic and shallot.
- 6. Rinse the salmon fillets under cold water.
- 7. Pat the salmon dry with a kitchen towel.
- 8. Cut the salmon into small cubes.
- 9. Peel the piece of ginger.
- 10. Grate the ginger finely.
- 11. Heat one tablespoon of oil in a large non-stick pan.
- 12. Place the salmon cubes, garlic, shallot, and ginger into the hot pan.
- 13. Fry the ingredients on all sides until golden brown over medium heat.
- 14. Remove the salmon cubes from the pan.
- 15. Set the salmon cubes aside.
- 16. Heat the remaining oil in the same pan.
- 17. Add the pepper strips to the pan.
- 18. Sauté the peppers over medium heat for two to three minutes.
- 19. Season the peppers with thyme.
- 20. Salt and pepper the peppers to taste.
- 21. Deglaze the pan with broth.
- 22. Simmer the peppers, stirring occasionally, for about five minutes.
- 23. Wait until the liquid has almost completely evaporated.
- 24. Pour double the amount of boiling salted water over the couscous.
- 25. Let the couscous swell for five minutes.
- 26. Return the salmon to the pan with the peppers.
- 27. Let the salmon rest in the pan for another two to three minutes.
- 28. Serve the salmon together with the couscous.
