  2. 2. Brush a baking dish lightly with oil.
  3. 3. Rinse the salmon fillets under running water.
  4. 4. Pat the fillets dry with a kitchen towel.
  5. 5. Place the salmon fillets into the prepared dish.
  6. 6. Season the fillets with salt, pepper, and a splash of lemon juice.
  7. 7. Slice the mozzarella into thin slices.
  8. 8. Distribute the mozzarella slices evenly over the fish.
  9. 9. Roughly chop the dried tomatoes and the olives.
  10. 10. Spread the chopped ingredients over the fish and cheese.
  11. 11. Place the dish in the oven and bake for 15 to 20 minutes.
  12. 12. Pour some wine over the dish after about 10 minutes of baking time.
