  1. 1. Cook the rice in salted water, following the instructions on the package exactly.
  2. 2. Rinse the salmon fillet under cold water.
  3. 3. Pat the fish dry with a kitchen towel.
  4. 4. Divide the fillet into four equal pieces.
  5. 5. Squeeze the limes.
  6. 6. Drizzle the salmon pieces with the lime juice.
  7. 7. Add some olive oil.
  8. 8. Let the pieces marinate for 15 minutes.
  9. 9. Peel the mangoes.
  10. 10. Slice the flesh off the pit.
  11. 11. Cut the mango slices into small cubes.
  12. 12. Squeeze the oranges.
  13. 13. Season the salmon pieces with salt and pepper.
  14. 14. Heat a grill pan until very hot.
  15. 15. Fry the salmon for about 3 to 5 minutes on each side.
  16. 16. Wash the basil.
  17. 17. Shake it dry.
  18. 18. Pluck the leaves off the stems.
  19. 19. Wash the spring onions.
  20. 20. Remove the hard ends.
  21. 21. Cut the onions into very fine strips.
  22. 22. Heat the orange juice in a pot.

  24. 24. Season the sauce with salt and pepper.
  25. 25. Puree the mixture until smooth.
  26. 26. Place the rice on the plate.
  27. 27. Place the salmon on top.
  28. 28. Pour the mango sauce over it.
  29. 29. Garnish the dish with the spring onions.
  30. 30. Sprinkle the basil over it.
