🍽️ Grilled Salmon with Fresh Mango-Orange Sauce

Ingredients
- 200 g Brown rice
- Salt
- 500 g Salmon fillet
- 2 Limes
- 4 tsp Olive oil
- 2 Mangoes
- 4 Oranges
- Pepper
- 1 sprig Basil
- 0.5 Spring onion
Instructions
- 1. Cook the rice in salted water, following the instructions on the package exactly.
- 2. Rinse the salmon fillet under cold water.
- 3. Pat the fish dry with a kitchen towel.
- 4. Divide the fillet into four equal pieces.
- 5. Squeeze the limes.
- 6. Drizzle the salmon pieces with the lime juice.
- 7. Add some olive oil.
- 8. Let the pieces marinate for 15 minutes.
- 9. Peel the mangoes.
- 10. Slice the flesh off the pit.
- 11. Cut the mango slices into small cubes.
- 12. Squeeze the oranges.
- 13. Season the salmon pieces with salt and pepper.
- 14. Heat a grill pan until very hot.
- 15. Fry the salmon for about 3 to 5 minutes on each side.
- 16. Wash the basil.
- 17. Shake it dry.
- 18. Pluck the leaves off the stems.
- 19. Wash the spring onions.
- 20. Remove the hard ends.
- 21. Cut the onions into very fine strips.
- 22. Heat the orange juice in a pot.
- 23. Add the mango cubes.
- 24. Season the sauce with salt and pepper.
- 25. Puree the mixture until smooth.
- 26. Place the rice on the plate.
- 27. Place the salmon on top.
- 28. Pour the mango sauce over it.
- 29. Garnish the dish with the spring onions.
- 30. Sprinkle the basil over it.
