🍽️ Tender Salmon on Creamy Spinach

Ingredients
- 300 g fresh spinach
- 600 g salmon fillet (4 salmon fillets)
- sea salt
- pepper
- 10 g butter (2 tsp)
- 2 sprigs dill
- 2 sprigs thyme
- 2 sprigs parsley
- 150 ml vegetable broth
- 1 organic lemon
Instructions
- 1. Wash the spinach thoroughly and spin it dry.
- 2. Rinse the salmon fillet under cold water and pat it dry with a kitchen towel.
- 3. Season the salmon with salt and pepper.
- 4. Heat one teaspoon of butter in a frying pan.
- 5. Sear the salmon for two minutes on each side over medium heat.
- 6. Wrap the salmon in aluminum foil.
- 7. Preheat the oven to 100 degrees Celsius (80 degrees Celsius with fan or gas mark 1).
- 8. Place the foil with the salmon in the oven and let it rest for ten minutes.
- 9. Wash the dill, thyme, and parsley and shake them dry.
- 10. Finely chop the herbs.
- 11. Heat the herbs together with the broth and the remaining butter in a small saucepan.
- 12. Add the spinach and toss it for one minute over medium heat.
- 13. Rinse the lemon under hot water and pat it dry.
- 14. Slice the lemon into thin rounds.
- 15. Divide the spinach among four plates.
- 16. Place the salmon fillet on top of the spinach.
- 17. Garnish the dish with the lemon slices.
