  1. 1. Wash the spinach thoroughly and spin it dry.
  2. 2. Rinse the salmon fillet under cold water and pat it dry with a kitchen towel.
  3. 3. Season the salmon with salt and pepper.
  4. 4. Heat one teaspoon of butter in a frying pan.
  5. 5. Sear the salmon for two minutes on each side over medium heat.
  6. 6. Wrap the salmon in aluminum foil.
  7. 7. Preheat the oven to 100 degrees Celsius (80 degrees Celsius with fan or gas mark 1).
  8. 8. Place the foil with the salmon in the oven and let it rest for ten minutes.
  9. 9. Wash the dill, thyme, and parsley and shake them dry.
  10. 10. Finely chop the herbs.
  11. 11. Heat the herbs together with the broth and the remaining butter in a small saucepan.
  12. 12. Add the spinach and toss it for one minute over medium heat.
  13. 13. Rinse the lemon under hot water and pat it dry.
  14. 14. Slice the lemon into thin rounds.
  15. 15. Divide the spinach among four plates.
  16. 16. Place the salmon fillet on top of the spinach.
  17. 17. Garnish the dish with the lemon slices.
