🍽️ Crispy Salmon Patties

Ingredients
- 1 onion
- 1 clove garlic
- 1 handful dill (à 5 g)
- 500 g salmon fillet
- 2 eggs
- salt
- pepper
- 125 g spelt wholemeal flour
- 1.5 tbsp sumac (Oriental spice)
- 3 tbsp olive oil
- 2 mini cucumbers
- 200 g yogurt (3.5 % fat)
Instructions
- 1. Peel the onions and the garlic.
- 2. Chop both ingredients very finely.
- 3. Wash the dill.
- 4. Shake the dill dry.
- 5. Pluck off the fine dill tips.
- 6. Set the dill tips aside.
- 7. Finely chop the remaining dill.
- 8. Rinse the salmon fillet.
- 9. Pat the fillet dry with a kitchen towel.
- 10. Cut the salmon into approx. 1 cm cubes.
- 11. Put the eggs into a bowl.
- 12. Whisk the eggs vigorously.
- 13. Add the diced salmon to the egg bowl.
- 14. Add the chopped onions.
- 15. Add the chopped garlic.
- 16. Add the chopped dill.
- 17. Stir all ingredients well into the eggs.
- 18. Season the mixture with salt.
- 19. Season the mixture with pepper.
- 20. Take a second bowl.
- 21. Put the flour into the second bowl.
- 22. Add 1 tablespoon of sumac.
- 23. Mix the flour with the sumac.
- 24. Add the salmon-egg mixture to the flour bowl.
- 25. Fold the mixture into the flour.
- 26. Mix everything well until a homogeneous dough forms.
- 27. Heat 2 tablespoons of oil in a large pan.
- 28. Take 1–2 tablespoons of the salmon mixture.
- 29. Put the portion into the hot pan.
- 30. Press the portion down slightly.
- 31. Fry the patties over medium heat.
- 32. Fry them for 6–8 minutes.
- 33. Turn the patties once.
- 34. Fry them until they are golden brown.
- 35. Repeat the process with the remaining mixture.
- 36. Preheat the oven to 80 °C.
- 37. Place finished patties in the oven if needed.
- 38. Keep them warm there.
- 39. Peel the cucumbers.
- 40. Wash the peeled cucumbers.
- 41. Shred the cucumbers lengthwise into thin slices.
- 42. Put the yogurt into a small bowl.
- 43. Season the yogurt with salt.
- 44. Season the yogurt with pepper.
- 45. Add the remaining oil to the yogurt.
- 46. Stir the yogurt until smooth.
- 47. Arrange the salmon patties on plates.
- 48. Place the cucumber slices next to the patties.
- 49. Pour the yogurt over the patties.
- 50. Sprinkle everything with the remaining sumac.
- 51. Garnish the dishes with the dill tips.
- 52. Serve with lemon wedges if desired.
