  1. 1. Peel the onions and the garlic.
  2. 2. Chop both ingredients very finely.
  3. 3. Wash the dill.
  4. 4. Shake the dill dry.
  5. 5. Pluck off the fine dill tips.
  6. 6. Set the dill tips aside.
  7. 7. Finely chop the remaining dill.
  8. 8. Rinse the salmon fillet.
  9. 9. Pat the fillet dry with a kitchen towel.
  10. 10. Cut the salmon into approx. 1 cm cubes.
  11. 11. Put the eggs into a bowl.
  12. 12. Whisk the eggs vigorously.
  13. 13. Add the diced salmon to the egg bowl.
  14. 14. Add the chopped onions.
  15. 15. Add the chopped garlic.
  16. 16. Add the chopped dill.
  17. 17. Stir all ingredients well into the eggs.
  18. 18. Season the mixture with salt.
  19. 19. Season the mixture with pepper.
  20. 20. Take a second bowl.
  21. 21. Put the flour into the second bowl.
  22. 22. Add 1 tablespoon of sumac.
  23. 23. Mix the flour with the sumac.
  24. 24. Add the salmon-egg mixture to the flour bowl.

  26. 26. Mix everything well until a homogeneous dough forms.
  27. 27. Heat 2 tablespoons of oil in a large pan.
  28. 28. Take 1–2 tablespoons of the salmon mixture.
  29. 29. Put the portion into the hot pan.
  30. 30. Press the portion down slightly.
  31. 31. Fry the patties over medium heat.
  32. 32. Fry them for 6–8 minutes.
  33. 33. Turn the patties once.
  34. 34. Fry them until they are golden brown.
  35. 35. Repeat the process with the remaining mixture.
  36. 36. Preheat the oven to 80 °C.
  37. 37. Place finished patties in the oven if needed.
  38. 38. Keep them warm there.
  39. 39. Peel the cucumbers.
  40. 40. Wash the peeled cucumbers.
  41. 41. Shred the cucumbers lengthwise into thin slices.
  42. 42. Put the yogurt into a small bowl.
  43. 43. Season the yogurt with salt.
  44. 44. Season the yogurt with pepper.
  45. 45. Add the remaining oil to the yogurt.
  46. 46. Stir the yogurt until smooth.
  47. 47. Arrange the salmon patties on plates.
  48. 48. Place the cucumber slices next to the patties.
  49. 49. Pour the yogurt over the patties.
  50. 50. Sprinkle everything with the remaining sumac.
  51. 51. Garnish the dishes with the dill tips.
  52. 52. Serve with lemon wedges if desired.
