🍽️ Skewers with Smoked Salmon and Zucchini

Ingredients
- 1 zucchini
- 1 tbsp rapeseed oil
- 6 slices smoked salmon
- 1 tbsp lemon juice
- 1 tbsp crème fraîche
- 2 tsp horseradish (from the jar)
- salt
- pepper (from the mill)
- 6 spring onions
- 2 tbsp parsley
- 6 pumpernickel rounds
- 6 toothpicks (for securing)
Instructions
- 1. Wash the zucchini, trim the ends, and slice it into 12 round pieces. Heat the oil in a pan and fry the zucchini slices on both sides until golden brown. Place them on kitchen paper to drain the fat and let them cool.
- 2. Drizzle the smoked salmon with lemon juice. Mix the Creme Fraiche thoroughly with horseradish, salt, and pepper. Fold in the chopped parsley. Spread the salmon pieces with the cream and fold them into small packets.
- 3. Trim the spring onions and shorten the white part to about 8 centimeters. Thread each toothpick with alternating pieces: a spring onion piece, a zucchini slice, a salmon packet, and another zucchini slice. Serve the skewers with the pumpernickel bases.
