🍽️ Grilled Salmon with Peach Salsa on Toast

Ingredients
- 4 salmon (approx. 120 g each)
- 4 tbsp olive oil
- salt
- pepper (from the mill)
- 2 peaches
- 2 bell peppers (red and green)
- 1 red onion
- 1 lime (juice)
- 1 tsp honey
- 1 tbsp freshly chopped cilantro
- cayenne pepper
- 4 slices toast bread
Instructions
- 1. Rinse the salmon under cold water and pat it completely dry with a kitchen towel.
- 2. Brush the fish with two tablespoons of oil, then season generously with salt and pepper.
- 3. Place the salmon on an aluminum foil tray and put it on the preheated hot grill.
- 4. Grill the fish over medium heat for 6 to 8 minutes, turning it occasionally.
- 5. Pour boiling water over the peaches briefly to blanch them (cook briefly in boiling water), then shock them immediately in ice water.
- 6. Peel the skin off the peaches, halve them, and remove the pits.
- 7. Dice the peach flesh into small cubes.
- 8. Wash the bell peppers, halve them, remove the seeds and pith, and cut them into small cubes as well.
- 9. Peel the onion and dice it finely.
- 10. Whisk the lime juice with the honey and the remaining oil in a small bowl.
- 11. Add the diced peaches, peppers, and onions, as well as the chopped coriander plant, to the oil-onion mixture.
- 12. Season the salsa to taste with salt and cayenne pepper.
- 13. Grill the toast slices on both sides for 1 to 2 minutes each until golden brown.
- 14. Place the toasted toast slices on the plates.
- 15. Arrange the grilled salmon on the toast and top with the peach salsa.
- 16. Serve the dish immediately while warm.
