  1. 1. Rinse the salmon under cold water and pat it completely dry with a kitchen towel.
  2. 2. Brush the fish with two tablespoons of oil, then season generously with salt and pepper.
  3. 3. Place the salmon on an aluminum foil tray and put it on the preheated hot grill.
  4. 4. Grill the fish over medium heat for 6 to 8 minutes, turning it occasionally.
  5. 5. Pour boiling water over the peaches briefly to blanch them (cook briefly in boiling water), then shock them immediately in ice water.
  6. 6. Peel the skin off the peaches, halve them, and remove the pits.
  7. 7. Dice the peach flesh into small cubes.
  8. 8. Wash the bell peppers, halve them, remove the seeds and pith, and cut them into small cubes as well.
  9. 9. Peel the onion and dice it finely.
  10. 10. Whisk the lime juice with the honey and the remaining oil in a small bowl.
  11. 11. Add the diced peaches, peppers, and onions, as well as the chopped coriander plant, to the oil-onion mixture.
  12. 12. Season the salsa to taste with salt and cayenne pepper.
  13. 13. Grill the toast slices on both sides for 1 to 2 minutes each until golden brown.
  14. 14. Place the toasted toast slices on the plates.
  15. 15. Arrange the grilled salmon on the toast and top with the peach salsa.
  16. 16. Serve the dish immediately while warm.
