  1. 1. Peel the garlic cloves and press them through a garlic press.
  2. 2. Mix the fresh herbs, mustard, pressed garlic, and soft butter in a bowl.
  3. 3. Season the butter mixture with salt and pepper.
  4. 4. Add a splash of lemon juice and stir everything well.
  5. 5. Put the herb butter in the fridge for later use.
  6. 6. Rinse the salmon pieces under running water.
  7. 7. Pat the salmon completely dry with a kitchen towel.
  8. 8. Coarsely crush the juniper berries in a mortar.
  9. 9. Mix the crushed juniper berries with white wine, vinegar, lemon juice, and honey.
  10. 10. Wash the dill and chop it finely.
  11. 11. Stir the chopped dill into the marinade.
  12. 12. Place the salmon in the marinade.
  13. 13. Cover the bowl and let the fish marinate for 30 minutes.
  14. 14. Preheat the grill to medium-high heat.
  15. 15. Slice the baguettes lengthwise, but do not cut all the way through.
  16. 16. Peel the cucumber.
  17. 17. Slice the cucumber into thin rounds.
  18. 18. Slice the herb butter into thin strips.
  19. 19. Fill the baguettes with the cucumber slices.
  20. 20. Place the butter strips on top of the vegetables.
  21. 21. Wrap the filled baguettes tightly in aluminum foil.
  22. 22. Place the foil packets on the grill.
  23. 23. Grill the bread for about 15 minutes.
  24. 24. Turn the packets once during grilling.
  25. 25. Remove the salmon cutlets from the marinade.
  26. 26. Place the salmon on the grill.
  27. 27. Grill the salmon for about 4 minutes on each side.
  28. 28. Brush the fish occasionally with some marinade.
  29. 29. Plate the salmon and the bread.
  30. 30. Serve the dish immediately.
