🍽️ Grilled Salmon with Herb Garlic Bread

Ingredients
- 5 garlic cloves
- 2 tbsp mixed, chopped herbs (e.g. parsley, chervil, rosemary, thyme, sage, chives, dill)
- 1 tsp hot mustard
- 125 g soft butter
- salt
- pepper (from the mill)
- 1 drop lemon juice
- 4 slices salmon cutlet (kitchen-ready, approx. 180 g each)
- 6 juniper berries
- 100 ml white wine
- 0.5 unwaxed lemon (juice)
- 2 tbsp white wine vinegar
- 1 tbsp honey
- 0.5 bunch dill
- 2 baguettes
- 1 cucumber
Instructions
- 1. Peel the garlic cloves and press them through a garlic press.
- 2. Mix the fresh herbs, mustard, pressed garlic, and soft butter in a bowl.
- 3. Season the butter mixture with salt and pepper.
- 4. Add a splash of lemon juice and stir everything well.
- 5. Put the herb butter in the fridge for later use.
- 6. Rinse the salmon pieces under running water.
- 7. Pat the salmon completely dry with a kitchen towel.
- 8. Coarsely crush the juniper berries in a mortar.
- 9. Mix the crushed juniper berries with white wine, vinegar, lemon juice, and honey.
- 10. Wash the dill and chop it finely.
- 11. Stir the chopped dill into the marinade.
- 12. Place the salmon in the marinade.
- 13. Cover the bowl and let the fish marinate for 30 minutes.
- 14. Preheat the grill to medium-high heat.
- 15. Slice the baguettes lengthwise, but do not cut all the way through.
- 16. Peel the cucumber.
- 17. Slice the cucumber into thin rounds.
- 18. Slice the herb butter into thin strips.
- 19. Fill the baguettes with the cucumber slices.
- 20. Place the butter strips on top of the vegetables.
- 21. Wrap the filled baguettes tightly in aluminum foil.
- 22. Place the foil packets on the grill.
- 23. Grill the bread for about 15 minutes.
- 24. Turn the packets once during grilling.
- 25. Remove the salmon cutlets from the marinade.
- 26. Place the salmon on the grill.
- 27. Grill the salmon for about 4 minutes on each side.
- 28. Brush the fish occasionally with some marinade.
- 29. Plate the salmon and the bread.
- 30. Serve the dish immediately.
