🍽️ Salmon with Orange Wheat and Spinach

Ingredients
- 1 organic orange
- 100 g pre-cooked wheat grains (e.g. Ebly)
- salt
- 450 g fresh spinach
- 30 g small onions (1 small onion)
- 250 g salmon fillet
- pepper
- 1 tbsp rapeseed oil
- fresh nutmeg
Instructions
- 1. Wash the orange thoroughly and dry it.
- 2. Finely grate the orange peel.
- 3. Cut the orange in half.
- 4. Squeeze the juice from the orange.
- 5. Pour 150 milliliters of lightly salted water into a pot.
- 6. Bring the water in the pot to a boil.
- 7. Add the wheat to the boiling water.
- 8. Let the wheat boil up once briefly.
- 9. Measure out 60 milliliters of the orange juice.
- 10. Take half of the grated orange peel.
- 11. Add the measured orange juice and half of the peel to the wheat.
- 12. Turn the heat to low.
- 13. Cover the pot.
- 14. Let the wheat cook for 10 minutes.
- 15. Clean the spinach.
- 16. Wash the spinach thoroughly.
- 17. Cut off the thick stems from the spinach.
- 18. Spin the spinach dry.
- 19. Chop the large spinach leaves roughly.
- 20. Peel the onion.
- 21. Dice the onion finely.
- 22. Rinse the salmon fillet.
- 23. Pat the salmon fillet dry.
- 24. Cut the salmon fillet into cubes.
- 25. Take the remaining orange juice.
- 26. Take the remaining orange peel.
- 27. Put the remaining juice and peel into a small bowl.
- 28. Mix the ingredients in the bowl.
- 29. Toss the salmon cubes in the mixture.
- 30. Season the salmon with salt all around.
- 31. Season the salmon with pepper all around.
- 32. Heat oil in a large non-stick pan.
- 33. Add the onion cubes to the hot pan.
- 34. Sauté the onions until translucent.
- 35. Add the spinach to the pan.
- 36. Season the spinach with salt.
- 37. Season the spinach with pepper.
- 38. Grate some nutmeg directly into the pan.
- 39. Fold the salmon cubes into the mixture.
- 40. Set the heat to medium.
- 41. Cook the dish for about 5 minutes.
- 42. Turn the dish several times in between.
- 43. Serve the salmon and spinach pan with the orange wheat.
