🍽️ Creamy Salmon and Spinach Gratin with Potatoes

Ingredients
- 500 g firm-boiling potatoes
- salt
- 1 tbsp butter
- 400 g spinach
- 2 garlic cloves
- 2 red onions
- 2 tbsp spelt whole wheat flour
- 2 tbsp lemon juice
- 350 ml vegetable broth (or white wine)
- 20 g parmesan (1 piece)
- 150 g cream cheese
- 2 tbsp crème fraîche
- pepper
- nutmeg
- 600 g salmon fillet
Instructions
- 1. Wash the potatoes thoroughly.
- 2. Place the potatoes in a pot with salted water.
- 3. Boil the potatoes for 20 minutes until they are cooked through.
- 4. Peel the cooked potatoes.
- 5. Cut the potatoes into bite-sized pieces.
- 6. In the meantime, take a baking dish.
- 7. Brush the baking dish with 1 teaspoon of butter.
- 8. Wash the spinach thoroughly.
- 9. Remove any thick stems or damaged leaves from the spinach.
- 10. Cook the spinach for 1 minute in boiling salted water.
- 11. Shock the spinach immediately to stop the cooking process.
- 12. Let the spinach drain well.
- 13. Squeeze the spinach firmly to remove excess liquid.
- 14. Finely chop the squeezed spinach.
- 15. Peel the garlic clove.
- 16. Peel the onion.
- 17. Finely chop the garlic.
- 18. Slice the onion into thin rings.
- 19. Heat the remaining butter in a pan.
- 20. Sauté the garlic and onions in the pan until they are translucent.
- 21. Dust the onion mixture with flour.
- 22. Pour the lemon juice into the onion mixture.
- 23. Pour the broth into the onion mixture.
- 24. Let the sauce simmer for 5 minutes.
- 25. Grate the Parmesan cheese finely.
- 26. Remove the pan with the garlic mixture from the heat.
- 27. Stir the grated Parmesan into the warm sauce.
- 28. Stir the cream cheese into the sauce.
- 29. Stir the crème fraîche into the sauce.
- 30. Season the sauce with salt.
- 31. Season the sauce with pepper.
- 32. Season the sauce with nutmeg.
- 33. Wash the salmon fillet.
- 34. Pat the salmon dry with a kitchen towel.
- 35. Cut the salmon into cubes.
- 36. Fill the prepared potato pieces into the baking dish.
- 37. Fill the chopped spinach into the baking dish.
- 38. Fill the salmon cubes into the baking dish.
- 39. Pour the prepared sauce over all ingredients in the dish.
- 40. Preheat the oven to 200 °C.
- 41. Set the fan-forced function to 180 °C.
- 42. Set the gas mark to 3.
- 43. Place the baking dish in the preheated oven.
- 44. Bake the gratin for approx. 25 minutes.
