🍽️ Grilled Salmon Skewers with Vegetables

Ingredients
- 500 g salmon fillet
- 200 g cherry tomatoes
- 2 yellow bell peppers
- 2 stalks celery
- 4 garlic cloves
- 20 g basil (1 handful)
- 0.5 organic lemon (zest and juice)
- 3 tbsp olive oil
- sea salt
- pepper
Instructions
- 1. Rinse the salmon under cold water and pat it dry with a kitchen towel.
- 2. Cut the salmon into bite-sized cubes.
- 3. Wash the tomatoes and remove the stem end if necessary.
- 4. Wash the bell peppers, remove the inside, and cut them into pieces.
- 5. Wash the celery, clean it, and cut it into pieces as well.
- 6. Thread the salmon and vegetables alternately onto 8 wooden skewers.
- 7. Peel the garlic and chop it finely.
- 8. Wash the basil, shake it dry, and pluck off the leaves.
- 9. Finely chop the basil leaves.
- 10. Mix the chopped garlic, basil, lemon zest, lemon juice, and oil in a bowl.
- 11. Season the marinade with salt and pepper.
- 12. Brush the skewers all over with the marinade.
- 13. Place the skewers on the hot grill.
- 14. Grill the skewers for about 8 minutes, turning them regularly and brushing them with the marinade in between.
