🍽️ Crispy Salmon Sandwich with Avocado

Ingredients
- 150 g Salmon fillet
- 1 Lemon
- 1 tsp Honey
- 1 tsp Sweet paprika powder
- Salt
- Pepper
- 1 tbsp Olive oil
- 4 slices Whole wheat toast (20 g each)
- 0.5 Avocado
- 1 Tomato
- 0.5 Onion
- 1 handful Romaine lettuce (20 g each)
Instructions
- 1. Rinse the salmon under cold water and pat it dry with kitchen paper.
- 2. Wash the lemon thoroughly with hot water, dry it, and finely grate the zest.
- 3. Squeeze out the juice.
- 4. Mix half of the lemon juice with the lemon zest, the honey, the paprika powder, the salt, and the pepper.
- 5. Place the salmon in this marinade and let it marinate for at least 15 minutes.
- 6. Heat the olive oil in a pan.
- 7. Fry the salmon in it over medium heat for about 3 to 4 minutes per side until golden brown.
- 8. Remove the salmon from the heat and let it cool slightly.
- 9. Flake the cooled salmon into small pieces.
- 10. Toast the bread slices in the toaster.
- 11. Halve the avocado and remove the pit.
- 12. Scoop out the flesh of the avocado.
- 13. Mash the avocado flesh roughly in a bowl with a fork.
- 14. Remove the stem from the tomato.
- 15. Wash the tomato and pat it dry.
- 16. Cut the tomato into small cubes.
- 17. Peel the onion and halve it.
- 18. Chop the onion finely.
- 19. Mix the tomato cubes, the onions, and the avocado.
- 20. Season the mixture with lemon juice, salt, and pepper.
- 21. Wash the lettuce and shake it dry.
- 22. Tear the lettuce into bite-sized pieces.
- 23. Spread two toast slices with the avocado mixture.
- 24. Top the toast slices with the salmon and romaine lettuce.
- 25. Cover each topped toast slice with a second toast slice.
- 26. Press the sandwiches down lightly.
- 27. Cut the sandwiches diagonally in half.
