🍽️ Crispy salmon with creamy lemon sauce and golden gnocchi

Ingredients
- 4 salmon fillets (with skin à 150 g)
- 1 untreated lemon (1 tbsp grated lemon zest)
- juice of one lemon
- 3 tbsp lemon zest
- 3 tbsp chopped basil
- butter
- 250 ml whipping cream
- 3 shallots (peeled and finely chopped)
- salt
- pepper (from the mill)
- freshly grated nutmeg
- oil (for frying)
- 400 g fresh gnocchi (from the refrigerated section)
Instructions
- 1. Rinse the salmon pieces under cold running water.
- 2. Pat the fish completely dry with a kitchen towel.
- 3. Season the meat evenly with a pinch of salt and freshly ground pepper.
- 4. Heat one tablespoon of butter in a frying pan.
- 5. Sauté the finely diced shallots in it until they are soft and translucent.
- 6. Stir in the finely grated zest of one lemon.
- 7. Fry the lemon zest briefly.
- 8. Deglaze the pan with the juice of half a lemon.
- 9. Add the cream to the sauce.
- 10. Let the sauce reduce slightly over low heat.
- 11. Season the sauce with salt, pepper, fresh basil leaves, and a pinch of grated nutmeg.
- 12. Heat three tablespoons of oil in a separate pan over high heat.
- 13. Place the salmon fillets skin-side down in the hot pan.
- 14. Fry the salmon for two to three minutes until crispy.
- 15. Turn the fish pieces.
- 16. Fry the other side for about one minute.
- 17. Fry the gnocchi in some butter in a pan.
- 18. Fry the dumplings until they are golden brown and crispy.
- 19. Season the gnocchi with a pinch of salt and freshly ground pepper.
- 20. Arrange the fried salmon on the plates.
- 21. Add the warm lemon sauce and the crispy gnocchi.
- 22. Garnish the dish with fine lemon zest and fresh basil leaves.
- 23. Serve the food immediately hot.
