  3. 3. Season the meat evenly with a pinch of salt and freshly ground pepper.

  5. 5. Sauté the finely diced shallots in it until they are soft and translucent.
  6. 6. Stir in the finely grated zest of one lemon.
  7. 7. Fry the lemon zest briefly.
  8. 8. Deglaze the pan with the juice of half a lemon.
