🍽️ Crispy Salmon on Citrus-Ginger Salad

Ingredients
- 2 romaine lettuce hearts
- 600 g salmon fillet
- 20 g ginger (1 piece)
- 2 organic lemons
- salt
- pepper
- 2 tbsp olive oil
- 75 ml vegetable broth
- 1 tsp honey
Instructions
- 1. Rinse the salad hearts under running water.
- 2. Spin the greens dry and cut them into thin strips.
- 3. Distribute the salad strips evenly across four plates.
- 4. Rinse the salmon fillets under cold water.
- 5. Pat the fish dry with a kitchen towel.
- 6. Cut the salmon fillet into coarse, bite-sized pieces.
- 7. Peel the ginger root with a spoon or peeler.
- 8. Cut the ginger into fine, thin sticks.
- 9. Rinse one whole lemon with hot water.
- 10. Pat the lemon dry.
- 11. Slice the lemon into thin rounds.
- 12. Halve the remaining lemon.
- 13. Squeeze the juice from the half lemon.
- 14. Season the salmon pieces with salt and pepper.
- 15. Heat oil in a large frying pan.
- 16. Fry the salmon until golden brown over medium heat.
- 17. Add the ginger and lemon slices to the pan.
- 18. Continue frying everything for three to four minutes.
- 19. Remove the salmon pieces from the pan and set them aside.
- 20. Place the fried salmon, ginger, and lemon on top of the salad.
- 21. Deglaze the pan drippings with broth.
- 22. Add the freshly squeezed lemon juice to the sauce.
- 23. Season the sauce with honey, salt, and pepper.
- 24. Drizzle the plated salad with the warm sauce.
