🍽️ Tender Salmon in Creamy White Wine Sauce

Ingredients
- 4 salmon steaks (each 200 g)
- 20 g clarified butter
- 300 ml fish stock
- 50 ml white wine
- 3 tbsp vermouth
- 150 g room-temperature butter
- salt
- pepper
- 1 pinch mustard powder
- lemon slice
- juice of one lemon
- capers
Instructions
- 1. Rinse the salmon under cold water.
- 2. Pat the fish completely dry with a kitchen towel.
- 3. Drizzle the salmon with lemon juice.
- 4. Season the fish generously with salt and pepper.
- 5. Let the seasoned salmon pieces rest for 10 minutes.
- 6. Put fish stock, white wine, and vermouth into a pot.
- 7. Bring the liquid to a boil.
- 8. Simmer the sauce on high heat for about 15 minutes.
- 9. Reduce the liquid until only about 100 milliliters remain.
- 10. Stir the butter into the hot sauce using a whisk.
- 11. Season the finished sauce finally with salt, pepper, and mustard powder.
- 12. Heat clarified butter in a frying pan.
- 13. Fry the salmon steaks on the first side until golden brown.
- 14. Turn the salmon and fry the second side until golden brown.
- 15. Place the cooked salmon on the plates.
- 16. Drizzle the prepared white wine sauce over the fish.
- 17. Garnish the dish with lemon slices and capers.
- 18. Serve the salmon immediately while hot.
