  6. 6. Put fish stock, white wine, and vermouth into a pot.
  7. 7. Bring the liquid to a boil.
  8. 8. Simmer the sauce on high heat for about 15 minutes.
  9. 9. Reduce the liquid until only about 100 milliliters remain.
  10. 10. Stir the butter into the hot sauce using a whisk.
  11. 11. Season the finished sauce finally with salt, pepper, and mustard powder.
  12. 12. Heat clarified butter in a frying pan.
  13. 13. Fry the salmon steaks on the first side until golden brown.
  14. 14. Turn the salmon and fry the second side until golden brown.
  15. 15. Place the cooked salmon on the plates.
  16. 16. Drizzle the prepared white wine sauce over the fish.
  17. 17. Garnish the dish with lemon slices and capers.
